A custard slice, also known as a vanilla slice or mille-feuille, is a pastry classic composed of layers of puff pastry filled with a rich custard cream.
Ingredients:
For the Puff Pastry:
2 sheets of store-bought puff pastry
For the Custard Filling:
2 cups milk
2 tsp vanilla extract
2/3 cup sugar
1/3 cup cornstarch
1/2 cup heavy cream
6 large egg yolks
For the Icing:
1 1/2 cups powdered sugar
2 tbsp hot water (more if needed)
1/2 tsp vanilla extract for flavor
Instructions:
Prepare the Pastry:
Preheat your oven according to the puff pastry package instructions.
Place each sheet of puff pastry on a baking paper-lined tray. Bake until golden and puffed up, then set aside to cool.
Make the Custard Filling:
In a saucepan, heat the milk and vanilla extract until hot but not boiling.
In a bowl, whisk together the sugar, cornstarch, and egg yolks until smooth. Gradually whisk in the hot milk.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens.
Once thick, remove from heat and stir in the heavy cream. Cover with plastic wrap to prevent a skin from forming and chill until set.
Assemble the Custard Slice:
Place one sheet of the cooled puff pastry in the bottom of a lined baking dish.
Spread the chilled custard evenly over the pastry.
Top with the second sheet of puff pastry, pressing down gently.
Prepare the Icing:
Mix the powdered sugar with hot water and vanilla extract to create a thick but spreadable icing.
Spread the icing over the top layer of puff pastry.
Chill and Serve:
Refrigerate the custard slice for a few hours to allow the layers to set.
Once set, use a hot, sharp knife to slice into squares or rectangles.
Serve chilled for a deliciously creamy treat.
