Last week’s roulade was strawberries and cream but Wimbledon’s over so we thought it was time for a change.

In the counter fridge this week we’ve got a raspberry (far superior berry for cream based desserts imo), passion fruit and white chocolate number.

We really enjoy putting these on the pass and watching Stuart as he tries to carefully lower the precarious puddings.

Did you know we do all our butties on a light, soft, squidgy roll developed around an old Lancs oven bottom recipe?

The recipe has been tweaked many times, adjusting quantities and methods little by little and I’m pretty happy that we’re achieving what I set out to make now. It’s been a wild ride of emotion with some pretty dark days so I wanted to celebrate it on the grid.

In the kitchen we call em OB’s and as they’re not exactly an oven bottom I think we’ll adopt that name for them on the counter moving forward.

P.s how tired does our mixer sound. We bought the biggest we could for the least amount of money when we opened….time for an upgrade soon.

If we have a day this week that isn’t 4 million degrees we’re going to do fresh baked scones with strawberry jam and cream.

Bit of crunchy sugar on the top to give that rock bun vibe and we aren’t in Devon or Cornwall so we’ll be putting our house made strawberry jam on the top….and the bottom. Don’t start, that debate can get almost as bad as when we all argue over the correct name given to a soft, round piece of sandwich bread.

Another scorcher today!

House-made corned beef, traditional pickle, lambs lettuce
Hot smoked salmon with dill crème fraiche and pickled cucumber
House-made potted ham, mustardy coleslaw
Duck egg mayo and cress
Creamy Lancs, tomato and chilli chutney, rocket

Our banana cake.

Yes, it’s basically a banana bread but without any of the dense desne sadness and regret.

We thought since it’s a cake let’s lean into that and make it more indulgent. It’s got sponge, banana caramel, cream cheese frosting, a grating of very nice dark chocolate and some of those crispy banana chips you get in a bowl of tropical muesli….you know the stuff with the little chewy pieces of candied papaya that make you feel all exotic.

Is banana bread a classic? I think it’s a modern one to be honest, given it was a huge source of purpose and comfort for many folk during the lockdown years, myself included.

Anyway enough of that, it’s only on for another day or so-so I thought it deserved its time in the sun. After that we’re filling the vacant counter space with freshly baked scones, clotted cream and house made raspberry jam ✌️

We’ve banned use of the best word to describe our carrot in the shop!

Moist.

It is though.

Lightly spiced with cinnamon and studded with big chunks of walnut. No sultanas because I reckon a higher percentage of you prefer it without. Topped with a, not too sweet, cream cheese and vanilla frosting.

One of our staples and here to stay.

Lovely sunny week here at the shop. And our first open 5 days a week!

The bright mornings definitely make us feel a little less like bread vampires.

Thanks to all that visited us, we’re still open for another hour with lots of sweet treats and sausage rolls to go at. Sandwiches flew out today but there’ll be more next Tuesday.

Get out in the sun and enjoy the weekend ❤️
