1. Necessity is the mother of invention.

You’ll be limited. You won’t have enough space, enough money, enough people and it’ll drive you crazy.

It’ll drive you so crazy you actually come up with good ideas of how to fix those problems and improve things.

Stuff will break. Like your coffee machine. So with limited time and experience you’ll figure out how to make cold brew so you can keep the show on the road.

2. Get problems - you’ll figure it out.

This is perhaps too over simplistic but growing a business is just fixing one problem after another. Often you have no idea how you’re gonna do it but you’ll find away.

Like buying a fridge and having no idea how you’re going to actually get it in the shop.

You’ll find a way. Then you’ll forget it was ever a problem and the business moves on.

3. You’re not building a business you’re building a brand.

Nothing will prepare you for the joy of seeing your own coffee bag branded in your own design.

Nothing will prepare you for the joy of people actually wanting to buy your coffee, your t-shirt, your hat, your merch.

Once a business is built it has its own personality, its own feel. It’s absolutely buzzin to see people embrace your brand, get behind it and champion it.

4. You’ll still go to Starbucks.

Look, we’re all championing independent businesses but don’t think you’re better than the big players. They’re big players cos they’re good at what they do and we could all learn a thing or two tbh.

5. Be inspired by others in the industry. They’re not your competition.

I mean they are if you want to view them as completion but truth is a vibrant hospitality scene means we all win.

It’s super easy to blame others but harder just to champion other businesses and actually be inspired by them.

Also take a trip away sometime. Earlier in the year we took a trip to NYC we came back excited and inspired. Nothing like getting out of your normal life to gain some encouragement and perspective.

6. Get ya kids involved.

There’s lessons you learn running a business that are invaluable and I wish I’d learnt them sooner.

We’re looking for someone who thrives in a busy, high‑standards environment.

Barista experience is essential.

Supervisory experience is a bonus: maybe you’ve been a shift lead, supervisor, or just naturally stepped up in previous roles.

What you’ll be doing:

• Being the face of HG Leyland, a consistent presence for our wonderful customers.
• Leading the shop day‑to‑day
• Keeping standards tight (service, speed, quality)
• Supporting and training the team.
• Stock, ordering, and smooth operations
• Being the calm, capable presence on shift

This role is full-time primarily Monday to Friday with occasional weekends. Perfect for someone wanting to develop a career in hospitality with super sociable hours.

Holy moments

The last month has been a real mix of different things at HG. All the usual things of those monthly flavours dropping as well as a few “think on your feet” moments and a special trip to NYC for some inspiration 🙌

We find ourselves in an exciting time for us as a business, we’ve got the BEST team and they do such a good job of keeping the show on the road, but we’re also still small so when life happens we’re back on the frontline figuring out problems and filling gaps. Theres was a day a couple of weeks ago when the coffee machine in Preston broke so we decided to do cold brew. It’s was one of those cool moments where team work kicked in. Me and Hannah had never done cold brew before but Lucy on our team had, so we followed her step by step process and at least has something to offer in Preston while the machine was fixed. To be fair it was done pretty quick which is a win!

Robean our little Robin neighbour (who we secretly think is a high powered lawyer on Winckley Square) keeps popping in for his daily double espresso and bird seeds, his wife even joins us sometimes.

Finally, we took a weekend trip to NYC at the end of April which was amazing. The food scene is incredible, I was thinking of adding some photos of the food but it wouldn’t do it justice. We sampled a ton of bagels which will serve as good inspiration for our own selection which will be released soon, great coffee and of course a load of doughnuts. We came away with new ideas in terms of how to make our products better but also simply how to create small spaces that actually work well for businesses like ours. A worthwhile trip.

We’re currently working on rolling out dem bagels 🥯 and also we’re assessing a couple of new locations. The goal was to open two new locations this year - will we do it?! I hope so! Stay tuned :-)
