🇵🇹 Portugal 🇵🇹

I was lucky enough to visit the city of Porto, Lisbon and a little town called Sintra in Portugal. I came across many signature bakes from each region including the most famous of them all, the Pastel de Nata.

Pastel de Nata is a Portuguese baked egg custard tart with a flaky puff pastry shell and a caramelised top. Traditionally eaten with a dusting of cinnamon. They were originally created in the district of Belém (Lisbon) under the name Pastéis de Belém. The vegan ones from .pt are the best!

Other bakes I discovered:

Bolo de Laranja - a moist orange cake

Queijadas de Coco - Portuguese coconut tarts

Bolo de Bolacha - biscuit cake made with the signature marie biscuits, soaked in espresso and layers with buttercream

Bolo de Brigadeiro - based on the Brazilian dessert 'brigadeiro'', it's a chocolate cake filled with a chocolate frosting made from condensed milk

Jésuite - triangular, flaky pastry filled with frangipane cream, topped with sliced almonds and powdered sugar

Bolas de Berlim - Portuguese doughnuts filled with custard

Travesseiros - The most famous dessert in Sintra. Literally translates to pillow, its a flaky puff pastry with a sweet creamy egg and almond filling and rolled in sugar

Queijada da Sintra - another famous dessert from Sintra, a thin crunchy pastry shell filled with a mixture of cheese, cinnamon, eggs and sugar

Bolo de Arroz - rice flour cake

Pudim Conde da Praia, - traditional tart from the Azores with a filling consisting of sweet potato, egg yolks, lemon and cinnamon

🇮🇳 Indian Celebration Cake 🇮🇳

I made this cake in memory of my grandad, on what would have been his 90th birthday. He had a deep love for food, especially anything sweet. He took great joy in our Indian desserts, with their fragrant notes of saffron, cardamom, and pistachio. In tribute to him, and to those beautiful, comforting flavours, I created this cake.

A saffron and pistachio sponge, paired with delicate cardamom buttercream.

🇵🇭 Ube Crinkle Cookies 🇵🇭

Ube is a widely used ingredient in Filipino desserts. It's a purple yam/sweet potato and is sweet with notes of vanilla and coconut.

These cookies are made with ube halaya (ube jam) and covered in icing sugar to give that crunchy 'crinkle' exterior. They are so delicious and worth trying if you fancy something new!
