Wild venison shot on the hills behind the Lodge and cooked over coals, chanterelles foraged from the forests around Dunvegan, elderberries from our staff house gardens, and nasturtiums and leeks from our polytunnel.

It’s always flavour first, but there’s something special about ingredients that come into season together and work so beautifully alongside one another.

Skye just happens to provide everything we could wish for at this time of year.

EDINBANE MANGALITSA PORK

Breakfast at Edinbane Lodge deserves the same care and quality of produce as our dinner menu.

We’ve always smoked our own pork from Lochalsh Butchers over birch wood chips, served alongside black and white pudding from Harlosh, croft eggs from Shearwatercroft Croft, tomatoes from our polytunnel just to name a few.

I’m really excited to take our traceability one step further with this rare breed Mangalitsa pork from , reared by Jake and Aoife Sayles just one mile from the restaurant.

Into the salt brine first, before being smoked over wood chips from the grounds of the Lodge. Can’t wait to get this onto our guests’ breakfast plates.
