It was for a baby’s first birthday. Did we cook tomahawk steaks for the babies? I fear the steak was more for the parents 🤣👨‍🍳

BBQ Menu for today:

- Wagyu Beef Burgers.
- Cider Braised Sausages
- Orange, Bay Leaf and Garlic marinated Chicken Thighs.
- Fillet Steaks
- Tomahawk Steaks.

We love a good Steak here at SALT Cø.

Last night’s guests here at the SALT Cø. Chefs Table seemingly do too.

A group of friends celebrating a retirement, I am honoured that they chose to come to us. If certainly was a lot having you all here, and we look forward to having you back in the future.

Master Class Dinners at SALT Cø. Chef’s Table:

THIS FRIDAY we will be doing our Round Fish Masterclass Dinner!

A Demo on how to fillet a round fish (Bass, Bream, Salmon etc) with an explanation on how we made the different courses on the menu.

The Menu:

- Local Mackerel Tartar, Cucumber soaked in Lemon Juice, Lime and Wasabi Foam.
- Local Bass Escabeche, Summer Carrot Escabeche, Herb Dressing, Roasted Chickpeas.
- Bergen’s Smoked Fish Soup.
- Pan Fried Crispy Skinned Local Bream, Crushed Peas dressed with Basil Oil, Pea Puree, Toasted Seeds, Minted Beurre Blanc.
- Lemon Mousse, Sherbet Lemon Zest, Lemon Sorbet, Lemon Sherbet Crumb.

Fish to be chosen on the day from parkstonefishpoole and the menu may be subject to change as I will see what is best on the day…but there is unlikely to be any issue going on their glorious display below

How do you feel about having a/ or coming to a Football Free Zone tomorrow night? We are all too aware England are playing tomorrow night…but that said:

I can’t say with all certainty that there won’t be any fisticuffs, it has happened before at a SALT Cø. Dinner and they do regularly get quite rowdy! But the likelihood is quite minimal.

We provide the delicious food and 50% of the banter, and you provide the guests.

Due to a cancellation we have availability to cook for you and as I’m heading up to London Village I have 5 hours on a train to plan a nice menu for you.

And Yesterday we did a 7 course Wedding Breakfast!

In my kitchen I have one of those world maps where one puts a pin on when one has been to said country…but Chef Ava had the great idea of using it to mark on where guests who dine at our Chef’s Table come from.

If the wedding yesterday was in our Chef’s Table then we would have been able to add New Zealand, but alas we had to “slum it” and the beautiful Canford Lodge near Winbourne.

A great and friendly bunch (as to be expected I understand, from New Zealanders.

We created a bespoke 7 course tasting menus (and we don’t charge double just because it is a wedding) for their Wedding Breakfast, and we did:

- SALT Cø. ‘Cornetto’.
- Tomato Tart Tatin, Balsamic Caramel, Puff Pastry, Tomato Consommé, Basil Oil.
- Baked Local Bream, Petit Ratatouille, Toasted Seeds, Basil Oil.
- Palate Cleanser.
- Pan Roasted Smoked Duck Breast, Creme Fraiche Mash, Persillade Dressing, Pickled Blackberry.
- Chocolate and Salted Caramel Tart, Cocoa Nibs, Frozen Raspberries.
- SALT Cø. 10p Mix Petit Fours.

Last night was Duck…I also have planned Flat Fish, Round Fish, Chicken, Lobster.

5 Course Tasting Menu with a Cookery demo on how to prepare different courses using said animal/ fish. Which ones would you like to do?

We cooked (in photo order):

- Smoked Duck Breast, Cucumber soaked in Lemon Juice, Burnt Apple Puree, Raw Apple, Apple and Chive Dressing.
- Overnight Braised Duck Leg Terrine, Salted Radish, Raw Radish, Burnt Apple Puree, Herb Dressing.
- Roasted Duck Broth, Brunoise of Carrot, Apple and Shallot, Rosemary Oil.
- Pan Roasted Smoked Duck Breast, Duck Fat Dauphinoise, Apple and Chive Dressing, Duck Jus.
- Lemon Posset Tart, Confit Lemon Zest Sherbet, Raspberry Pate de Fruits, Frozen Raspberries.
