The Dish: Bombay Spiced Fries

The energy of Bombay is incredible, and the street food is absolutely brilliant in its
simplicity! We noticed almost every stall serving up quick, hot snacks to busy locals.

We stopped by a street vendor who took hot, crispy fries and tossed them in a beautiful, warm blend of garam masala, cumin, and sea salt. They were drizzled with a curried mayo and topped with finely chopped red onions and fresh coriander. It is crunchy, punchy, and utterly addictive. I knew right away this would make the ultimate special for the board back at Cromwells!

Ollie’s final Mediterranean diary entry ✍️

🇬🇷 𝓢𝓪𝓷𝓽𝓸𝓻𝓲𝓷𝓲, 𝓖𝓻𝓮𝓮𝓬𝓮 🥙

We caught a spectacular southern breeze that carried us straight over the brilliant blue waters of the Aegean Sea, landing on a gorgeous, sun-bleached Greek island. The moment we stepped out of the basket, the irresistible aroma of meat grilling over open charcoal fires led us straight to a small, family-run taverna.

We ordered the Souvlaki, and it was pure sunshine on a plate. Tender chunks of chicken marinated in fresh lemon juice, garlic, and wild mountain oregano, grilled over flames until perfectly smoky and juicy. It came tucked inside a warm, fluffy pita bread alongside crisp red onions, ripe tomatoes, and a massive dollop of cool, creamy, homemade tzatziki sauce made with thick Greek yogurt, garlic, and grated cucumber. It's fresh, vibrant, and the ultimate crowd-pleaser!

🇨🇾 𝓛𝓲𝓶𝓪𝓼𝓼𝓸𝓵, 𝓒𝔂𝓹𝓻𝓾𝓼 🧀

The Dish: Flame-Grilled Halloumi with Toasted Buckwheat & Agave-Mustard Salad

A short, breezy hop east brought us to the beautiful island of Cyprus. We found a lively coastal tavern where the tables were packed with locals sharing small plates of incredible produce. The star of the show was undoubtedly their famous squeaky cheese, Halloumi!

The chef cut thick, generous slabs of authentic Cypriot halloumi and griddled them right in front of us until they developed a gorgeous, golden-brown charred crust on the outside while remaining warm and soft in the middle. It was served over a wonderful, fresh green salad tossed with crunchy toasted buckwheat and dressed in a sweet, zesty agave-mustard dressing. The balance of salty, warm cheese with the crisp, sweet-and-tangy greens was absolute perfection. This is going to make an irresistible special on our board!

Ollie’s 1st Mediterranean diary entry ✍️

🇮🇹 𝓣𝓾𝓼𝓬𝓪𝓷𝔂, 𝓘𝓽𝓪𝓵𝔂 🍅🌿

Mamma Mia! The air over Tuscany smells of warm earth, pine, and sweet basil. Phileas Dog and I brought the balloon down near an old stone farmhouse trattoria where the owner was pulling warm, olive-oil-drenched focaccia straight from a wood-fired oven.

They served it open-faced, piling the warm bread high with a fresh Caprese salad; thick slabs of creamy mozzarella, sweet ripe tomatoes, and vibrant green basil pesto, finished with a swirl of rich balsamic glaze. It’s light, vibrant, visually stunning, and bursting with Mediterranean warmth. A dish that simply belongs on the Cromwells specials board! Phileas spent the entire afternoon resting his nose near the plate, hoping for a stray speck of mozzarella!

OLLIE & PHILEAS HAVE EXPLORED THE MEDITERRANEAN! 🌍

After the hot air balloon drifted away from the markets of Germany and Belgium, Ollie and Phileas touched down in the sun-drenched Mediterranean, and their incredible discoveries land on our specials board this week!

Ollie’s travel diary is bursting with vibrant new flavours, crisp ingredients, and sun-soaked recipes. Our kitchen has turned his latest stops into three spectacular worldly specials:

🇮🇹 𝗧𝘂𝘀𝗰𝗮𝗻𝘆, 𝗜𝘁𝗮𝗹𝘆: Warm rosemary focaccia topped with a fresh, vibrant Caprese salad, basil pesto, and rich balsamic glaze.

🇬🇷 𝗦𝗮𝗻𝘁𝗼𝗿𝗶𝗻𝗶, 𝗚𝗿𝗲𝗲𝗰𝗲: Grilled chicken Souvlaki wrapped in a warm pitta with fresh tomatoes, red onions, and cool, homemade tzatziki.

🇨🇾 𝗟𝗶𝗺𝗮𝘀𝘀𝗼𝗹, 𝗖𝘆𝗽𝗿𝘂𝘀: Golden, grilled halloumi served over a green salad with buckwheat and a sweet agave-mustard dressing.
