A closer look at a few dishes from our summer set lunch menu.

Cured Duncton trout with marinated beetroot and buttermilk and South Down lamb fillet with fresh peas grown from the garden and salsa verde, with a side of homemade focaccia with herb butter.

The garden has found its way into the cocktail menu.

Meadow & Mist, with lavender and lemon balm picked from our beds, grapefruit peel and Chilgrove Gin from just down the road in the South Downs.

Hazel & Herb, built around smashed Thai basil with a rim of dehydrated oregano salt - aromatic, herbaceous and grown just a few steps from the bar.

From an afternoon drink to an evening aperitif, both are made for summer on the terrace at The Woodcote.

The garden's found its way into the cocktail menu.

Meadow and Mist, made with lavender and lemon balm picked from our beds, grapefruit peel, and Chilgrove Gin from just down the road in the South Downs.

Hazel & Herb, built around smashed Thai basil and a salt rim of dehydrated oregano. Hot, spicy, and grown a few steps from the bar.

A new chapter in The Woodcote’s kitchen.

Nathan Cornwell joins The Woodcote as Chef Director, bringing over fifteen years’ experience from some of Europe’s most respected kitchens. His career has included Le Champignon Sauvage, Geranium and Oaxen Krog, followed by four years as Head Chef at The Barn at Moor Hall, where he guided the restaurant to its first Michelin star, before most recently leading the kitchen at The Silver Birch in Chiswick.

Nathan’s cooking is led by the rhythm of the seasons and the ingredients available around him. That philosophy feels entirely at home at The Woodcote, where the Chef’s Garden, our own hives, and close relationships with local farmers, fishermen and growers shape the menus each day.

We’re delighted to welcome Nathan to The Woodcote and look forward to sharing the next chapter of our story with you.
