If you go back, for those of us that can remember…
What was the most popular / go to dish, from a Chinese Tak Awa ?
I’ll give it a go…
Chicken Breast Curry would have to up there.
Chicken Fried Rice, with meat and skin pulled from boiled or roast whole chickens.
None of this straight edged cut ‘cooncil stuff that folks are using.
Even the traditional Battered Sweet & Sour Pork Balls, had their ‘Day’.
Now, though, the most popular dish, without a single shadow of a doubt, is ‘Salt & Pepper / Chilli Chicken wae S& P Chips’.
It’s unanimous.
At MaMa’s, we still hand cut the fresh chicken breast, prep, batter and deep fry by hand, your crispy Chicken Chunks’.
We even produce a Gluten-Free recipe too.
We use fresh chilli and garlic for the heat, rather than the dried aged stuff.
For flavouring, our special salt mixture, which every Chinese Kitchen, has their own recipe.
I like to use fresh peppers, onions and sometimes shredded carrot, for the colouring.
Just enough to brighten up the dish, if we use too much veg, this can make the chicken pieces soggy.
