S'mores - The dessert from our last Supper Club!

This one is naughty... Brown butter biscuit base (Greg Wallace?), dark chocolate ganache, toasted coconut, cocoa nibs, vanilla ice cream and toasted Italian meringue 🤤🤤🤤

Palate cleanser from last month's Seafood Supper Club 🍣

Watermelon Sashimi

Compressed watermelon, with sesame seeds and a citrus glaze. Compressing the watermelon completely changes the texture and gives it the look and mouth feel of tuna!

My first Death Row inmate has had her last meal 💀😂

Last night we created a bespoke "Death Row" menu for the wonderful Marie from birthday. No pressure, right?

I gave Marie two choices: tell me the full three-course menu of your dreams, or just give me a list of your absolute favorite ingredients and I'll handle the rest... she chose the latter. She had an epic list, so I had lots of lovely things to play with CHEESE (she is the cheese queen after all) steak, truffle, chocolate, hazelnut praline, it's all there.

This was so much fun, I've been wanting to start offering this for private dining experiences for a while and I couldn't have been happier that Marie was my first Death row diner! ⚰️

Thai Style BBQ Black Bream (easy for you to say...), Nam Jim sauce, lettuce cups, rice noodles and .microgreens Asian mix

The main course from our most recent supper club, Brixham black bream, absolutely on point from , salt crusted and cooked on the BBQ. The Nam Jim sauce is sooooo good with it 🥵 salty, sweet, spicy, tangy 🤤

Garden was looking nice that evening too 👨‍🌾🌅

First starter (hobbit voice) from last Saturday's Supper Club 😍

"Sea" & Crumpets

Dressed Brixham crab, homemade crumpets, brown crab fraiche and crab bisque

All the crab from our friends at this is the best gear around. Thanks for the shells 🐚 🦀

This one is a lot of effort but totally worth it, sweet dressed white crab, s**t loads of butter, a little brown crab creme fraiche and a touch of smoked paprika on top of a freshly toasted crumpet, with a rich bisque. To dunk or not to dunk...? I love the presentation of this one, the play on tea and crumpets is so fun. We've also just got some really nice tea cups (courtesy of grandparents past) and it's nice to use them.

Finally, the dessert from our last Supper Club! Rhubarb and custard tart

Sous vide, forced rhubarb on top of a set custard, crisp pastry, rhubarb jelly and compressed rhubarb. This one is a labour of love. Hours of work, gone in seconds 🤤

This time of the year, everyones on the rhubarb hype and it's easy to see why.
