This week’s weather forecast:

☀️Harvest elderflowers
🌧️Make elderflower cordial

We took advantage of the brief appearance of the sun earlier this week to gather both pink and white elderflowers.

Superbly fresh and fragrant. We made 20 litres of concentrated cordial which will be turned into syrups, sorbets, ice cream and special Silk House drinks.

On our menus now!

A very British summer, but at least it tastes delicious.

A note for parents in Paddock Wood & surrounding villages

We are looking to build a very small pool of 2–3 occasional assistants (17+) for private dining events at Silk House Dining in Rhoden Green near Paddock Wood.

These are paid, occasional roles supporting fine dining lunches and dinners in a calm, safe, structured rural setting.

Our current valued team includes sixth form and university students. They are fantastic and we hope to keep them, but with school and university commitments their availability naturally varies, and we have quite a busy summer ahead.

This is not bar work or a bustling restaurant environment. Service is attentive, quiet, and detail-focused, with full guidance and training provided.

We operate as a team where everyone contributes - this is a guest-facing role where attention to detail is essential throughout service.

We are particularly interested in hearing from:

- university students
- sixth form students
- young adults with an interest in food and guest service (an interest in cooking is a bonus)

We are posting this with parents in mind, as you may know someone responsible, presentable, and interested in gaining experience in a fine dining environment.

If you think someone may be suitable, please ask them to message us briefly with a short introduction and availability.

Please feel free to share or tag someone who might be interested.

Thank you

The Silk House Dining kitchen may have grown slightly too many tomato plants this year…🍅

A few weeks ago, many of them found new homes around Rhoden Green neighbourhood, just outside Paddock Wood.

Yellow, purple, striped, green and red varieties - all heading off to local gardens, greenhouses and allotments.

The tomato grow-off has started.

We can’t wait to see how everyone’s tomatoes are doing later this summer. 😎

A beautiful morning in Staplehurst collecting fresh raw milk from with Archie.

Together, Steve, Karen, Frank and Archie produce some of Kent’s most celebrated cheeses, including Kentish Blue and Kingcott Blue, with a real passion for traditional farming and exceptional quality.

It is always inspiring to meet the people behind outstanding local produce - one of the many reasons Kent is such a special place for food.

There’s something very special about making cheese from scratch.
Our homemade cheese begins with fresh milk from the Jersey cows , just outside Sevenoaks.
Rich, creamy, and full of character.
We transform it by hand in our kitchen into a cheese, served with our homemade bread at the Chef’s Table.
