🍷 A Taste of the Loire – Wine • Dinner • Conversation

We’re delighted to be hosting the first evening in The Silk House Guided Wine Tastings Series.

Join us for an informal tutored tasting with Tim Fletcher of Rodney Fletcher Vintners, exploring one of France’s most fascinating wine regions.

Tim and Adrian have selected a collection of Loire wines offering a broad geographical view of the region and some of its best producers. As each wine is tasted, they’ll share the story behind the producer, the vintage and the bottle, along with the knowledge and enthusiasm that has shaped their own enjoyment of wine over many years.

The tasting will be accompanied by a rustic supper, specially prepared for the evening.

Whether you already have an interest in wine or are simply curious to learn more, this is an opportunity to taste, ask questions and discover something new.

Meet the maker | Phil Beal

A couple of weeks ago we visited Phil Beal Beals Farm , just a short drive from Silk House Dining.

We have always believed that understanding where our ingredients come from and meeting the people behind them adds another layer to the dining experience. We spent some time with Phil learning about his journey, his approach to charcuterie and the care that goes into producing each product.

Phil works with Mangalitsa pigs, a rare breed known for its exceptional flavour and beautiful marbling. I have to say, tasting Phil’s ham was a real revelation. As someone who is not usually drawn to fattier cuts of meat, I was completely surprised by how beautifully balanced it was. It was, without exaggeration, the best ham I have ever tasted - full of flavour, incredibly tender and simply melting in the mouth.

What really stood out during our visit was the knowledge, patience and attention to detail involved in creating these products. It is clear how much thought and care goes into every stage, from the animals themselves through to the finished charcuterie.

Naturally, we came away with some of Phil’s charcuterie for our guests to enjoy at Silk House Dining. We are looking forward to sharing these exceptional products and the story behind them.

A little glimpse into the SHD kitchen garden pantry…

This is a new dark chutney made entirely from our own kitchen garden produce - and it has taken us quite a while to develop.

This version combines gooseberries and blackcurrants, with Silke’s purple chillies adding a gentle spice kick. It has become a wonderful accompaniment to our pork three ways dish, bringing a deep, fruity contrast alongside the richness of the meat.

It also offers a different flavour experience to our green tomato chutney, which has become a favourite with our fine charcuterie selection.

We also make a gooseberry and pink currant chutney - a lighter, sweeter version which, in small amounts, works beautifully to cut through the richness of custard-based desserts.

And yes, before anyone asks…we haven’t yet managed to grow cinnamon, sugar or spices in the SHD kitchen garden - although we are always experimenting with. 😉

Our first visit to Owley Farm Mushrooms

Last week we had the pleasure of visiting Owley Farm Mushrooms for the very first time, where we met Harvey and Alex and learned more about the fascinating world of mushroom growing.

Harvey kindly showed us around the farm, explaining the growing process and sharing the care, knowledge and dedication that goes into producing such exceptional mushrooms. It was wonderful to see first-hand the passion behind the ingredients we serve.

Their beautiful mushrooms featured on our menu last weekend and again this week, and our guests have been thoroughly enjoying them.

A huge thank you to Harvey and Alex for such a warm welcome. We look forward to working together and celebrating more of their fantastic produce in the seasons ahead.

This year’s strawberry harvest has been exceptional.
The first photo shows today’s harvest. The second shows the next harvest already ripening in the garden.
We’re currently serving our homegrown strawberries as part of a dessert for our guests. In many cases they’re picked just hours before service.
One of the advantages of growing our own produce is that we can harvest it when it’s fully ripe and serve it at its best.

No food miles. Just strawberries from our garden to your dessert.
