Run by James and Elizabeth Armitage, the Jericho Coffee Traders encompasses the iconic Pukeko truck, a vivid turquoise tuk-tuk converted into a mobile cafe, and a familiar sight around the city, the micro roastery and espresso bar in Osney Mead and a cafe on Oxford's busy High Street. JCT supplies many Oxfordshire cafes and restaurants with coffee, including Quod and the Old Bank, Gees, The Old Pa

rsonage, Tap Social and the Old Bookbinders, to name a few. The coffee is sourced directly from the farms via a number of experienced coffee traders, and comes from Burundi, Colombia, Brazil, Ethiopia, Kenya, DR Congo and India. JCT pride themselves on being as carbon neutral as possible. This includes local delivery of beans by cargo bike and electric car. JCT has a coffee subscription service which can be found at www.jerichocoffeetraders.com. You can also buy coffee equipment and one off purchases. Run by husband and wife team James and Lizzie Armitage, who share a passion for coffee and social interaction, Jericho Coffee Traders is the realisation of years of work in the coffee trade here in Oxford. Cupping day with James and Stretch. Here's what's actually happening.

Cupping is the universal language of the coffee industry. From farmers evaluating their own harvest to importers assessing new lots, everyone uses the same method. One level playing field where the only variable is the coffee itself.

Coarsely ground coffee is placed dry into bowls. Hot water is poured directly onto the grounds and left to steep for around four minutes. The grounds rise to form a crust, and the first evaluation starts here. You break that crust with a spoon, releasing the trapped gases underneath. That first burst of aroma tells you a lot before you've tasted a thing.

Once the crust is broken, you slurp the coffee hard enough to spray it across your palate. It sounds chaotic. It's actually precise. The aeration brings out the full flavour profile in a way that sipping never could.

Each coffee is scored on fragrance, aroma, flavour, aftertaste, acidity, body, and balance. Anything scoring 80 or above on the SCA scale is considered speciality grade. The coffees at @
