My husband had a hankering for a Toms Le Club so as a treat I made one for him. Now I’m used to making a vat full of Cajun sauce but for ease I bought some ready made cajun spices which I mixed with some mayo.
I kept some of the spices and mixed with yogurt to marinade my chicken breasts (although you could use skinned and b***d thighs) roast the chicken and marinade along with some smoked streaky bacon which I picked up from my local farm. When just cooked leave to cool. When you’re ready to eat, heat the oven (I don’t own a panini grill anymore) I either make a baguette or for ease buy a part baked baguette or ciabatta . Layer in your sliced chicken mixed with your cajun mayo, bacon and mozzarella. Wrap in foil and bake until heated and the cheese is gloriously squishy. Enjoy
