I was lucky enough to spend a couple of days at the factory in Treviso.

Here’s lovely showing us how to ball high hydration dough for pinsa. Get some rice flour on your scales so it’s not a sticky mess!

Speedy lunchtime pizza. I love the cheese but I ate 2.5 blocks of paneer yesterday so I need a little dairy break today.

Baked in the Home oven, manual model. Love this little guy with my whole heart. 300c on the top element, 0 on the base.
