Getting ready for our new pasta dish:
🍝 Mezze maniche alla Genovese. 💪

The beef and onions are slowly braising to create a wonderfully rich, silky sauce.

Despite its name, la Genovese is one of Naples’ most iconic pasta dishes. Its exact origins remain uncertain. The most widespread theory dates back to the 15th century. Many Genoese sailors and tavern keepers set up shops around the port of Naples and the area known as the Loggia di Genova. These cooks used to prepare a meat and onion-based stew, which the locals eventually dubbed "alla genovese" (Genoese style).

Another popular legend attributes the recipe to a Neapolitan chef from the 15th or 16th century who was nicknamed ’o Genovese (“the Genoese”). He reportedly became famous throughout the city for this distinctive pasta dish, made with beef, sweet onions and white wine, slowly braised to create a wonderfully rich and silky sauce.
