An evolution in our favoured expression of Bacchus, and one that has become Flint’s signature style. To bring out the best in Bacchus during fermentation we use only small barriques, large oak foudres and un-lined concrete tanks to soften the wine and develop more complex aromatics.
#2 While intense in colour, it remains dry, deliciously fresh and floral. This is a rosé made for sunny days, light-bodied yet remarkably textured, finishing with a savoury salinity.
Pinot Noir leads the way with expressive aromas of wild strawberry, cherry and crushed raspberry. Oli’s winemaking is built for complexity and elegance, using neutral old oak for maturation to give a soft, juicy texture on the palate. Pinot Blanc and Chardonnay bring fleshy white peach and watermelon flavours, balanced by a bright, crunchy acidity.
