Our wild mushroom composition, enriched with the depth of winter truffles, has marked this chapter with quiet elegance and intensity. A dish rooted in the forest, shaped by the rhythm of the cold months.
This weekend, it leaves the menu (as all things should when their moment has passed).
We cook with the seasons, guided by what is at its peak, embracing both arrival and departure as part of the experience.

Twelve months ago, we took over "Don Txoko" with a simple ambition: to bring Norfolk’s only Basque-inspired Asador to life.

Over the past year, the flame has danced, the Rubia Gallega steaks have sizzled over fire, and every wine we’ve poured has been chosen to complement the story on the plate.

To every guest who has shared a meal at one of our five tables, you have been part of this journey. Your laughter, curiosity, and appreciation have made our little restaurant feel like home.

Here’s to many more nights of fire, flavour, and connection, and to the art of dining done with heart.
