One of the best things about being a local coffee roaster is building relationships with other wonderful local businesses here in Cheshire!

It was such a pleasure to introduce my Brazilian family and friends to 🇧🇷🎾 And of course, we’re very proud to supply the coffee for such a cool place!

If you haven’t yet discovered this hidden gem in Allostock, Knutsford, then it’s time for you to go and play some padel! It’s a really accessible game - seriously, if we can play with no experience, pretty much anyone can!

Eat, drink, play local! We believe in supporting great local businesses whenever we can.

One of the best things about opening a roastery is all the interesting people it attracts! Coffee connects people and this afternoon it was a visit by .y.chen from Taiwan. Jacky collects wh***ey and is travelling with his family to distillery in Scotland to auction off a bottle of Macallan 1926, one of (if not the) rarest and most valuable in the world!

I also had the pleasure of meeting his son who is a roaster in LA who founded .la, a 4th wave specialty roastery & coffee shop in West Hollywood.

As a speciality coffee roaster it is essential to cup coffees consistently in order to ensure quality control, sample new coffees from producers & of course to continually develop and expand your pallet.

Why Ponce?!

Before we get to the coffee, let’s address the question on everyone’s mind — why is it called Ponce?

As much as I’d love to give you a clever, knowing answer that subtly winks at the occasional pretentiousness that creeps into the world of speciality coffee… the truth is far simpler. I always try to name our coffees after the producer, in honour of the hard work and dedication that sits at the heart of every great coffee. This one is no exception.

So, let’s celebrate the wonderful Alex Ramon Ponce Rodríguez. Mr Ponce — you are an absolute legend.

This naturally processed Pacas from Finca Palo Verde in Marcala, La Paz is a sweet, vibrant Honduran coffee bursting with red fruit and candy-like notes, rounded out by a smooth Irish cream richness from slow cherry ripening at high altitude.

FLAVOUR NOTES : Raspberry, Irish Cream, Candy
