Anyone else just want to eat chocolate cake for breakfast? Okay fine, lunch and dinner and some afternoon tea too? 😋

This one always gets me in a serious chocolate mood!
During training, we were taught to use the ingredients of the cake to help inform the decoration, not to use things that aren’t actual ingredients just to make it look pretty and that’s something that’s always resonated with me (ignoring the flowers and gold leaf 😊)

The abundance of different forms you can get nuts in nowadays serves to change up textures in cakes and how you use their flavours as ingredients. I love using the chopped hazelnuts on here as well as the halves, it really gives it that garden feel to match the flowers, and matches the flavour of the praline and the ground hazelnut used in the dacquoise 👌

A gorgeous coincidence that this beauty happens to be gluten free 😘

You can take your Bruce cake and elevate it with layers of fudgy flourless chocolate sponge, alternated with crunchy hazelnut dacquoise, brown butter chocolate ganache and a pear compote with zesty poached pears to lighten it all up. Decadent and most definitely one for the chocolate lovers whilst covering your fussier friends with the lightness of the meringue crunch and the lightness of the pear. Trust me on this one 😘

Alix Rue Patisserie X Victoria sponge✨

Spent the end of last week creating this little beauty for a 70th birthday ❤️

Hopefully you lovely people are getting the idea now that I’m not a simple sponge and filling kind of gal, so I really loved the brief of ‘Victoria sponge’ and being able to make that flavour my own.

Delightfully moist layers of vanilla bean sponge, with a vanilla bean syrup soak, mascarpone vanilla bean white chocolate ganache with little pockets of strawberry coulis and raspberry coulis, with a sharp fresh raspberry jelly, coated in a white chocolate Italian meringue buttercream 👌

I knowwww some of you are die hard Swiss meringue buttercream fans but if I’m gonna do buttercream I’ll stick to my Italian, such a soft sweetness that doesn’t overwhelm the pallet with sugar, and lends itself SO well to the addition of chocolate 😋
