Lamb Kidney & Pasta – Proper Farmhouse Comfort
There’s something special about cooking with traditional ingredients, and this week we’re shining a light on one of the most underrated stars of the butchery counter — lamb kidneys. Packed with flavour, rich in nutrients, and brilliant value, they’re a fantastic way to bring real farmhouse cooking back to the table.
Kidney meat is very nutritious! Like many organ meats, kidneys are low in calories and low fat, but are packed with essential vitamins and minerals. These include but are not limited to a slew of B vitamins, selenium, and protein. However, also similar to other offal recipes, kidneys are a high cholesterol food. So be mindful about how much you eat if you are closely watching your cholesterol.
To get the very best from them, a little preparation goes a long way:
• Trim the kidneys to remove the thin outer membrane and the central white core. This gives you a tender bite and a cleaner, milder flavour.
• Soak them briefly in cold salted water or milk for 20–30 minutes. This step softens any strong notes and draws out impurities.
• Dry them well before cooking so they sear beautifully instead of steaming.
• Cook quickly over high heat — kidneys love fast cooking. A hot pan, a k**b of butter, and a couple of minutes each side keep them tender and juicy.
• Once they’re browned set aside to rest while you make the sauce.
Build the rich, glossy sauce with onions, garlic, white wine and some double cream. The wine serves to deglaze the pan, lifting the rich browned bits which have stuck to the bottom during the previous cooking stages. Let the wine bubble and simmer, watching as it reduces in volume by about half, concentrating its flavours. Add in some chopped cherry tomatoes. Now, reintroduce the browned lamb kidneys to the pan, nestling them into the rich sauce you've just crafted. Let them bathe in the sauce, simmering for approximately 5 minutes. This not only heats the kidneys through but also lets them soak up the delectable flavours of the sauce.
