Many of the recipes we share on this page are flavoured with Mexican oregano, and you might be wondering 'What is the difference between traditional oregano and Mexican oregano?' Oregano is from the Lamiaceae plant family; the mint plant family, whereas Mexican oregano is part of a different plant family; Verbenaceae, the same as lemon verbena, meaning that Mexican oregano has a more earthy taste with citrus undertones. We made burritos with the pork and they were delicious.

You should definitely have a go at making the pork at home, it’s so tasty and can be used for all sorts of things. Tacos, burritos, quesadillas or even on jacket potatoes! 😁

Recipe

1.5kg Pork Shoulder cut in to several pieces.

Marinade-
1 tsp All Spice Berries
2 tap Ground Cumin
1/2 tsp Cloves
1 tsp Peppercorns
100g Achiote Paste
3 tbsp Cider Vinegar
1 Onion Roughly Chopped
3 Garlic Cloves Peeled
1tbsp Oregano (Mexican if possible)
1tbsp Salt
400ml Orange Juice

Put all of the marinade ingredients in to a blender and pulse until smooth

Cover the pork pieces until completely smothered then cover and refrigerate overnight.

Preheat the oven to 130 degrees/ Gas 1

Transfer the pork and it’s marinade to a large casserole dish and cook covered with a tight fitting lid for 3-4 hours until soft and falling apart tender.

Serve in deep bowls with rice or tortillas.

We’re working on some awesome things for 2021, but for now it’s a lazy Saturday morning and that can only mean one thing...let’s get cooking! This beautiful piece of pork shoulder is going to turn in to the most succulent and tasty Pork Pibil. It’s going to take 3 or 4 hours in the oven, I’ll post the finished product and full recipe later on!!!

Historically, the Gulf coast of Yucatan was a hot spot for pirates, and according to the Spanish, one of them was named Sir Francis Drake. And whilst the pirate himself is no longer around, the seafood dish named after him is! From ‘Rick Stein’s The Road to Mexico’, where he was inspired by many Mexican chef’s on his journey, Sir Francis Squid with Almonds, Guajillo chilli, & Potatoes captures the taste of the area. This starter dish serves 4, but also works great as tapas:

Ingredients:
• 2 tbsp olive oil
• 350g squid (prepared weight), cut into rings
• ¼ tsp salt
• 20 turns black peppermill
• 20g almonds, skin on and chopped
• 4 new potatoes (about 300g), freshly boiled and sliced thickly
• 1 dried guajillo chilli, seeds shaken out, sliced into rings
• ½ tsp sweet paprika
• 1 clove garlic, thinly sliced
• 125ml shellfish stock
• Juice of ½ lime
• A few sprigs of coriander

Recipe:
1. Heat the olive oil in a heavy frying pan over a high heat.
2. Season the squid with salt and pepper and fry it for 2 minutes – if you have the tentacles chuck them in too.
3. Add the almonds, sliced potatoes, chilli rings, paprika, and garlic and fry for another minute before pouring in the shellfish stock.
4. Stir, add the lime juice and cook until the sauce has reduced and coats the ingredients.
5. Serve immediately, garnished with a little coriander.
