Sticky Squared.

All the delicious, sticky goodness for last weekend’s hen menu .

Starting with Whiskey Glazed short rib with ‘Stovies’ Croquette , Honey roasted carrots, Caramelised Cauliflower Puree and Salsa Verde .

Then finishing with the ultimate pud - Sticky Toffee Pudding with Amaretto Toffee Sauce , Vanilla Ice-cream and Fresh Rasps.

Beautifully presented and served - with our Miriam White 🫶🏻

A proper stunner of an Summer evening Italian feast …

Starting off with a hit parade trio of Antipasti - from Proscuitto + Pea Arancini , Parmesan Polenta and Grilled Garlic Shrimp, to Peach + Heirloom Tomato Bruschetta

Followed by a cheats take on ‘Osso Bucco’ with Fillet Steak , Roasted Almond Romesco, the PIGSMILK Pavè Potatoes with Cacio e Pepe Sauce and Green Caponata

And of course something sweet to finish … Strawberry Pannacotta with Roasted Strawberries , Balsamic Caramel and Almond Brittle

A very colourful and flavour packed Mexican Feast - with all the trimmings …

- Watermelon and Tomato Pico De Gallo
- Cajun King Prawns and Fresh Avocado for Tacos
- Elote Sweetcorn Ribs with Sour Cream, Spring Onions and Toasted Coconut
- 6hr Charlotte's Butchery Chipotle Pork Shoulder and Pink Pickled Shallots
- Spicy Mexican Rice with Black Beans and Fresh Coriander

We also served Mexican Cinnamon and Orange Chocolate Mousse but it didn’t get captured

The ultimate early British Summertime menu to enjoy after a day of celebrating our bride and groom, in the idyllic Northumbria countryside .

Starter -
Scallops - Beurre Blanc - Edamame - Peas - Pickled Fennel

Main -
Beef Fillet - Wellington - Mustard Potato Puree - Beef Fat Carrots - Crispy Kale - Red Wine Jus

Dessert -
Raspberry and Peach Frangipane Tart - Elderflower Chantilly - Almond Brittle

The perfect way to kick off an evening of dining - celebrating the wedding of Helen & Roly, last weekend - blending the very best of both Scottish and Northumbrian ingredients .

🐖 Beetroot Gravlax with Horseradish Celeriac Remoulade, Pickled Shallots and Homemade Oat Blinis
🐖 Homemade Mini Yorkshire puds with Caramelised Cauliflower Puree, Roasted Venison and Asparagus Tips

An incredibly ‘ Happy Meal ‘ indeed .

Simultaneously sipping and scranning some of the best food and drinks I’ve had this year, while revelling in a gorgeous catch up with .pt 💅🏼🍸

📸 Last night - with banging snacks by .kitchen and delish paired cocktails by

- Lindisfarne Oyster with Ajo Blanco , Rhubarb and Chilli Oil
- Negroni and Fried Korean Rice Cakes with Gorgonzola and Kimchi dip
- Confit Duck and Baron Bigod Croquette with Burnt Honey, Chilli and Orange Ketchup
- Espresso Martini and Malted Chocolate Ganache
- Menu + Colouring Book

I braved the severe ‘Spring’ weather to collect another bundle of Wild Garlic leaves and some daffys …

The weather changed from sunshine, to wind, to rain, to hail in the short time I was out there, however all made worthwhile by this Wild garlic Mornay (cheese sauce) I made with my WG. Creamy cheddar sauce with that fresh spicy hit of garlic from the leaves.

I then layered this over fresh leeks and covered with rye breadcrumbs and more cheese. The result - a Leek and Wild Garlic Gratin

The perfect addition to any weekend dinner or an iconic trimming to a Sunday roast !

10/10 Wouldn’t recommend foraging wild garlic with a Golden Retriever - you may notice a lower yield … 🍃

But impossible to stay mad at that face… 🫶🏻
