This week we’ve had bakery consultant Mickael Jahan in with us, working alongside Team Rye to help sharpen up our bakery operations.

He’s been supporting the team across production flow, timings, organisation, consistency and the small details that make a big difference day to day.

For us, it’s about always improving making better bread and pastry, building stronger systems, and giving the team the tools to do their best work.

A big thanks to Mickael for sharing his knowledge, experience and energy with us. Plenty to take forward.

Part-time Delivery Driver
We’re looking for a reliable part-time delivery driver to help with early morning bakery deliveries.
The regular hours are Tuesday to Saturday, 7am–9am.
There will also be additional hours available when covering holidays for our other driver, which could increase the role to around 20 hours per week during those periods.
The job involves loading orders, delivering to our shops/customers, and making sure everything arrives on time and in good condition.
You’ll need to be reliable, punctual, organised, comfortable with early starts, and confident driving.
A full UK driving licence is required.

PAASBROOD - our take on a Dutch Easter classic.

An enriched dough, slow fermented for flavour, packed with soaked fruits and wrapped around a log of almond paste through the centre.

Somewhere between a fruit loaf and stollen but lighter, softer, and built to be eaten thick-cut with a good bit of butter.
and I have been working on this one behind the scenes, developing a version that fits how we like to make things, proper fermentation, balanced sweetness, and no shortcuts.

Big thanks to for helping us shape this into a custom version for one of our wholesale customers.
