In Tau-Rema in Timor-Leste, fertility is not something you buy—it’s something you manage. Because communities like this one have been geographically isolated and historically marginalised from the global coffee trade, they have long relied on their own resources.

Our partners at Karst Organics have worked with them to turn this challenge into a strength through on-farm closed-loop composting. This isn't a replacement for their traditional mulching techniques; it is a powerful addition to it.

What does "Closed-Loop" actually mean?
It means that every nutrient that leaves the soil to grow a coffee cherry is eventually returned to it. By taking the organic waste from coffee processing and animal manure, composting it for 4 months, and spreading it back under the trees, the farmers are gently supporting the cycle of growth and decay.

This system keeps the community self-sufficient. They aren't dependent on expensive, outside chemicals to maintain their soil—they are fueled by the forest itself.

Farming in Timor-Leste means working with incredibly steep terrain. In the Hatuhei and Tau-Rema regions especially during the rainy season, the risk of erosion and landslides is a constant reality.

Instead of concrete or plastic, the farmers use biomass barriers. This is biological engineering at its most intuitive:

+ Fallen logs, pruned branches, and organic waste matter are strategically placed along the mountain's contours.

= These barriers slow down water runoff and trap soil that would otherwise wash away.

# Over time, these barriers break down, creating natural terraces of rich, fertile land that is easier to harvest.

By investing in equipment and paying significantly higher prices per kg, our partners at Karst Organics ensure these labor-intensive practices are economically viable for the farmers, protecting both the community’s future and the land they love.

For the farming communities of Letefoho, "regenerative farming" isn’t a new thing—it’s an ancestral worldview.

Many of the coffee farmers Kar Yee and Stewart from (our importing partners) work with have a deep spiritual connection with the land and its inhabitants. Farming is a practice of respect, not extraction.

This photo shows a healthy coffee forest at Tau-Rema, a farming community at almost 2000 masl, where coffee is intercropped with yams and arrow root amongst other plants and grows under a shady canopy of nitrogen-fixing Albizia and Casuarina trees. When Stewart and Kar Yee first began working here, they found that while the trees were well tended to, many were quite old which impacted both the yield and the flavour quality.

To address this, they helped the community tap into a state-led coffee restoration program. Here, you can see the results: younger, smaller coffee trees recently planted alongside the older canopy. The farmers still carry out their traditional regular clearing, pruning and weeding throughout the year and the weeds and biomass resulting from this process serve as a mulch around the base of their coffee trees which breaks down and provides nutrients to the coffee by replenishing the soil. Thanks to these measures the community has seen a successful turnaround—with both quality and yield improving year on year. This rejuvenation of the system and its biodiversity doesn’t just make for a healthier ecosystem; it’s what gives the coffee from Tau-Rema its distinctive quality and flavour profile.

We are very pleased to have coffee from the Tau-Rema community back on our menu for the fourth year in a row. This Fully Washed lot offers a balanced profile of dark chocolate, red grapes, and raw cane sugar.

The farmers in the Letefoho region have grown coffee for generations. For these communities, and especially the farmers in the remote village of Tau-Rema, farming is guided by a deep-rooted belief that the land and all its inhabitants are interconnected. This inherent respect for the ecosystem means "regenerative" farming isn't just a modern trend here - it is a way of life.

While these communities have long held the expertise to grow exceptional coffee, they have often lacked a say in the global market. have set out to bridge this gap and we are proud to work them. Based both in Timor-Leste and the UK, Stewart and Kar Yee provide the essential connection and infrastructure—from technical support and training to direct market access—ensuring the farmers receive a significantly higher price for their stewardship.

Over the coming days, we’ll be sharing more about the work Karst Organics and the coffee farmers of Letefoho have put in over the last year to bring back this crowd pleaser of a coffee!

+++ NEW COFFEE 📢 +++ 🇲🇽 Mexico Frailesca - Fully Washed 🇲🇽 +++

In the Sierra Madre of Chiapas, coffee isn't just a crop—it's part of a living ecosystem. Our latest community lot, Frailesca, comes from 24 villages bordering the El Triunfo Biosphere Reserve.

​While much of the region has struggled with deforestation from big agribusiness, many of the farmers who grow this lot maintain traditional polyculture systems. These are essentially edible forests where coffee grows alongside fruit and shade trees, protecting the soil and providing a home for the vibrant Quetzal bird.

​This coffee is brought to us by our importer, .coffee, who paid producers of the up to 38% above local prices last year. They are part of a larger mission called .comunidad —a collective that links coffee quality to social health, supporting everything from feminist collectives to Montessori schools for the farmers' children.
