Hi all im going to give you a bit of background info into running events and how it works. And give you an idea of the work behind the scenes. Believe me its not just as easy as turning up and baking pizzas. I wish it was π€£π€£π€£
For the bank holiday weekend i had 3 events. Fri, Sat and Sun. I had the chance of an event on Bank Holiday Monday but i decided not to. For a few reasons.
1, ive never done back to back let alone 4 on the bounce.
2, I dont have the fridge capacity to cater for 4 events in such a close period of time.
3, its hard work prepping, loading the trailer, unloading the trailer, cleaning, washing the trailer and all the trays containers and utensils.
So prep work....
I have 2 dough fridges which can fit a total of 20 dough trays in. Each dough tray contains 6 dough balls (pizzas). So my maximum is 120 dough balls (or pizzas) for cold temp fermentation.
I also have a proofing oven for room temp fermentation, but i much prefer to work with cold temp dough. Its much easier to shape and lasts longer and is much better to work with.
I prepped the dough on Wednesday. My mixer will take 12kg of flour at a time which will make me 60 dough balls, so i did 2 12kg mixes.
Once the dough is done i then concentrate on my menu and stock. My biggest cost by far is cheese.
Heres a breakdown of what i used over the weekend.
25 kg flour
9kg cheese
6kg tomato
3kg pepperoni (i ran out)
250g salami
250g chorizo
3 packets Nduja
2 packets Fresh chillies
1 basil plant
1Β½ jars sundried tomato
1 jar jalapenos
2 onions
2 tins of sweetcorn
2 trips to the wholesalers
After each event the trailer clean down
Sweeping the floor
mopping the floor,
cleaning prep surface and serving hatch
cleaning the fridges.
Emptying hand wash basin dirty water
Cleaning ovens
Utensils in dish washer after each pop up.
6 fridge food trays
4 Pizza cutters,
4 pizza cutter holding trays
2 Pizza ladles
Scissors
2 Dough scrapers.

Clean my car out ( flour gets everywhere from used dough trays).

Etc
Gas level checks, calculating how much gas i have left, will this be enough, do i need to refill.
Making up 200 pizza boxes.
Not gonna lie, Sunday night i got home, had a takeaway and drank 4 bottles of water as the ovens in the trailer are hot and you do get dehydrated. I fell asleep with my dog on my lap.
So today Bank Holiday Monday is wash day (oh Joy).
There is probs loads more i havent even touched on, but this gives you an idea.
Its hard work, but I am enjoying it. My mind is occupied and I am kept busy. Jill wanted me to do this, Jill chose the name Dough On The Go. This is my way of coping. Making Jill proud β€οΈ
