Barbados cuisine, anyone? π§π§
Whilst not flaunting spectacular colours, it makes up for it in delicious, straight-from-the-ocean flavours.
I'm here currently and love their national dish- the first photo- Flying Fish and Cou Cou.
π Flying Fish is usually cooked in a rich Bajan tomato-based gravy
π Cou Cou- made by boiling fresh Okra and stirring in cornmeal and butter- has the consistency of polenta and soaks up all that Bajan gravy!
π Fish Cutters- essentially a fish sandwich- this one was Marlin caught that day
π Swordfish- photo 3- with traditional rice and pigeon peas and Macaroni Pie- Bajan dish baked with sharp cheddar and mustard
