Meet the Angels - Kate our Front of House Manager 🪽

I’m Kate, I started at Freckled Angel in December 2016 after leaving Plas Cadnant to try something new. Freckled Angel was perfect as I already knew Deb and the restaurant back then was small, cute and didn’t get too busy.

It took me a while to get into the swing of things but loved meeting new people, and the regulars that came back again and again that we got to know who still join us today.

In July 2019, I was privileged enough to join Deb and Mike at the Welsh Food Awards where we won 🎉 then in 2020, I moved up to front of house manager and we took on some new staff members who I got on with and loved our shifts together.

Almost 10 years later, I’m still with them, just turned 50 and now a grandma... running around isn’t quite as easy as it used to be even though I walk my dog every day and try to keep fit 😊

Today the restaurant is bigger, seating over a 100 on a busy night, staff have come and gone, but Deb remains and we still have lots of laughs and giggles on shifts together, especially with my eldest daughter being on our team too.

The Story Behind Freckled Angel

To celebrate 10 years since Freckled Angel opened it's doors, we'd love to share the meaning behind the name and our journey over the past decade.

The name is a tribute to a dear friend of Mike's who passed away too soon. The name Freckled Angel comes from a record created by the Welsh singer-songwriter Ren.

As for Mike, he started out training and working at Portmeirion, and upstairs at the Bull in Beaumaris. Soonafter in 2014, Mike and I met (lucky him! 😂) and, after some time together, we registered my kitchen at home to start Freckled Angel private catering from intimate proposal dinners to large functions.

After a year, a friend then encouraged us to take the leap and open a pop up restaurant in the Telford Centre in Menai Bridge, where we hosted a 7-course tasting menu. This is where the idea of British & Global fusion small plates began to take shape and became our signature style for years to come.

In 2016, we opened our very first small restaurant in Menai Bridge, seating only 16 people! This venue quickly became everyone's favourite and the topic of conversation among many of our regulars.

After a couple of years of success, in 2018, we decided to buy 49 High Street in Menai Bridge, just a few doors down from our last premises. We were now seating up to 40 people and living above it with our five children. A big step up from our last place, and one that became a little sauna during the summer months! 😂

During this time, we added two new additions to our fabulous team, Connal Roberts, Mike's cousin, as sous chef, and now our front of house manager Kate Clayton.

We needed bigger and better but Covid arrived, causing us some stressful times. It didn't put us off though, and in 2022, we spotted a building on Dale Street that had recently gone up for rent, the old council offices, as well as The Ruby and The Straits restaurant.

So, we went for it, brought the family together & took on the challenge of getting everything ready for our grand opening in our most recent premises, seating up to 100 covers! And here we still are today, thanks to you 😄

Thank you to everyone that has supported us throughout the years. It's been full of ups and downs, but a it's journey we wouldn't change for the world. Thanks again for letting us borrow the name Ren x
