Tricolour Meatball Skewers bring together three delicious flavours in one colourful, crowd-pleasing dish. Made with Shefa mince meat, tender minced lamb and juicy minced chicken, each meatball offers its own distinct taste and texture. Threaded onto skewers and cooked until beautifully golden, they’re perfect for sharing, entertaining or adding a fun twist to a family meal.

Ingredients

1 pack Shefa Mehadrin minced beef

1 pack Shefa Mehadrin minced chicken or turkey

1 pack Shefa Mehadrin minced lamb

450g pesto × 3 (homemade preferred!)

3 eggs

Breadcrumbs, as needed

Wooden skewers

Cherry tomatoes or other vegetables (optional)

Oil spray

Method

Place each pack of minced meat separately into its own bowl.

Add 1 egg and 150g pesto to each bowl.

Add breadcrumbs to the chicken/turkey and lamb mixtures as needed, until the mixture is easy to shape.

Mix each meat mixture well and roll into individual meatballs.

Thread one beef, one chicken/turkey, and one lamb meatball onto each wooden skewer, adding cherry tomatoes or your favourite vegetables between the meatballs.

Place the skewers on a lightly greased baking sheet and spray with a little oil.

Oven: Cook for approximately 15–20 minutes, until fully cooked through.

Grill/George Foreman: Cook until browned and cooked through.

Voila!  Three meats, one delicious skewer! Enjoy!

Golden pretzel-crusted chicken gets drizzled with a sticky homemade hot honey and topped with tangy quick-pickled red onions for the perfect balance of crunch, heat and freshness. Whether you fry or air fry, this is an easy dinner that's guaranteed to become a family favourite! 

Save this recipe for your next weeknight dinner!

 

Hot honey pretzel chicken cutlets

4 chicken breasts butterflied and pounded thin

2 cups crushed salted pretzels

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

 
Coating

2 eggs

 

Hot honey drizzle

1/2 cups honey

1-2 tsp chilli flakes

1 tbsp apple cider vinegar

 

Pretzels

Mix panko, garlic powder, smoked paprika, salt and pepper

Whisk eggs

Dip chicken in panko mixture then egg then pretzels

Fry or air fry schnitzel until crispy

Warm honey mixture through for 1 min

Drizzle over cutlets before serving

 

Quick Pickled Red Onion

 1 medium red onion, very thinly sliced

½ cup water

¼ cup distilled white vinegar

¼ cup apple cider vinegar or additional white vinegar

1 ½ tablespoons maple syrup or honey

1 ½ teaspoons fine sea salt

 

Heat liquid

Add onions to a glass jar and pour liquid over and let seep for 1/2 hr

 
Comment avocado or salad if you’d like the recipe for the rest.

Need a quick, hearty meal packed with vegetables and flavour? This Pesto Beef & Garden Vegetable Skillet is a simple one-pan dinner that's perfect for busy weeknights. Made with minced beef, homemade pesto, carrots, peas, and a rich tomato sauce, it's comforting, nutritious, and easy to customise. Give it a try and let me know what you serve it with!

Pesto Beef & Garden Vegetable Skillet

Ingredients

1 pack minced meat

3 tablespoons pesto (homemade if possible)

1 egg

1 pack fresh shredded carrots

1 bag frozen peas

1 jar ready-made herb and tomato sauce

A little oil for cooking

A splash of boiling water (optional)

Method

 

Combine the minced meat, pesto, egg, and half of the shredded carrots in a large bowl.

Heat a little oil in a large frying pan or skillet and add the meat mixture. Press it flat with a spoon or spatula as it cooks.

Break up the meat and stir regularly to prevent it from sticking together in large clumps.

Pour in the herb and tomato sauce, adding a splash of boiling water if the sauce is too thick.

Stir in the frozen peas and the remaining shredded carrots.

Simmer for about 20 minutes, stirring occasionally, until the meat is fully cooked and the vegetables are tender.

Serve on its own, with rice, pasta, mashed potatoes, or crusty bread.
