Starting off 2024 on a major high with my new roasting assistant (Shady) joining the team yesterday. To mark the occasion everyone's favourite coffee returns, Brazil Patricia! This year's harvest from everyone's favourite 3rd generation female producer from Espirito Santo do Pinhal is better than ever. Super smooth and has heaps of chocolate hazelnut flavour. One of the key espresso staples that you can enjoy all year long. Patricia coffee isn’t just delicious. But it's the first coffee we ever bought back in 2019 in her first year in the Specialty Coffee market and the first coffee farm I was fortunate enough to visit. So as you can imagine holds a very special place in my heart. This long term partnership to continue purchasing Patricia coffee from Santo Antonio is made possible thanks to the incredible Bruna Costa of Costa Cafe and Jack Ravenscroft at DR Wakefield.

The Còrcega farm is the center of Sebastian's coffee project, a world renowned coffee producer who is the 4th generation of a coffee family. With more than 14 years of experience in the coffee sector, together with his family, consolidating a project to focus on specialty coffees in 5 farms in Quindio, seeking innovation and experimenting in post-harvest processes such as Carbonic fermentation.

This lot was won by me at the WALA 2023: Best of Geishas auction. The varietal is called Wush Wush. Originally from a small area in southwest Ethiopia, like Geisha it made its way to Colombia about 30 years ago. The varietal is known for its distinctive flavour profile and is one you definitely want to try.

Colombia 🇨🇴 La Serrania.
Natural EA Decaf. Caturra, Castillo.

La Serranía is grown along an isolated set of mountains within the central cordillera of the Andes that go through Pitalito, Acevedo, Palestina, Timaná, and Suaza. This coffee sourced through represents the work of more than 50 producers who are committed to quality and excellence, whose farms sit between 1500-1750masl.

La Serranía is carefully hand-sorted and processed at each individual farm, with special attention paid to the drying process to ensure consistency, uniformity, and a clean cup profile.

La Serranía Decaf is a Natural EA Decaf Coffee, processed at the Descafecol plant in Manizales. The decaffeination process at this plant uses ethyl acetate derived 100% from sugar cane mixed with mountain water, together removing 99.7% of the caffeine present.

The beauty of the Natural EA process is that it helps preserve most of the original flavors of the coffee while adding fruity notes and some complexity to the cup. A style of processing that truly is challenging what people imagine when they think of decaffeinated coffee.

Coming to the end of the 4th year running this workshop. Which is still as fun as the first one done back in 2018. Since then over 400 people have come along to fast track their learning in a laid-back environment and went home happy. Come learn how to produce latte art patterns with confidence and steam high quality milk with consistency. Every Saturday & Sunday from 10:00-12:00.

Espresso quality control early this morning on our 4 Single Origin Espresso's currently on offer:
Brazil Patricia, Guatemala El Cabro Plot, Colombia Popayan Reserve and Kenya Ichuga Aa.

Each different to one another. We check each roast profile 7 days post-roast against the previous profile written 14 days post-roast. Comparing and contrasting. Trying our best to objectively assign cupping scores with notes for each. Resting the coffee being a crucial part of this process allowing for more clarity of flavour in the cup to appear as the degassing process post-roast occurs.

Finally, we pull espresso shots - taking TDS (total dissolvable solids) readings to calculate extraction percentages for each. Always making sure each batch reaches our baseline standard.
