India presenting our palate cleanser: amasake sorbet.
The sorbet is made from brown rice inoculated with koji spores, while the accompanying oil is infused with Jin Xuan milk oolong tea. Developed in Taiwan in the 1980s, this celebrated variety, also known as No. 12 or Milk Oolong, is prized for its naturally creamy, floral character.
Together, they create a light, delicate palate cleanser with subtle creamy and floral notes, preparing you for the sweet courses to follow.
