Before a dish ever reaches the menu, it’s trialled, tasted, talked about, changed, remade… and sometimes started all over again.

In these moments, we pull everything apart flavour, balance, texture, presentation. Some dishes are remastered. Some disappear altogether. Some never make it beyond this discussion.

So when one finally earns its place on the menu, you can be fairly certain it’s there for a very good reason.
