| SMOKED BACON FAT CACIO E PEPE 🥓🍝

This weekend’s specials board is bringing a little zero-waste magic to the table.
We take leftover smoked bacon fat, combine it with starchy pasta water, freshly cracked black peppercorns and plenty of Pecorino to create a thick, glossy, ridiculously luxurious sauce.
Big flavour, simple ingredients, and making the most of what we’ve got. All flavour. Zero waste.

We’ve just got back from a few days in Paris celebrating Lucy’s 40th birthday, and what a trip!
Lots of exploring, plenty of amazing food and some much needed time together. ❤️
Of course, when you run a restaurant, you can’t completely switch off the food brain! 😂
We came home inspired by some of the incredible flavours, dishes and ideas we discovered along the way.
