| NOTHING GOES TO WASTE
At The Auction House, we believe the last place anything should end up is the bin.
What many people would throw away, we see as an opportunity to create something incredible. Sriracha pulp becomes seasoning for our cocktails and dishes. Leftover vegetables are transformed into kimchi. Fruit trim and peelings are fermented into fruity hot sauces. Even the whey from our ricotta finds a second life in our homemade caramels.
It’s all part of our commitment to making the most of every ingredient, reducing waste, and celebrating creativity in the kitchen.
Sustainability isn’t just a buzzword for us, it’s part of everything we do.
