Sushi begins long before the fish is sliced. It begins with the grain. That’s why we work with The Rice Factory London, specialists in premium Japanese rice, milled right here in London to preserve freshness, texture and flavour. .rice.factory.london

In Japan, rice isn’t simply a side — it’s the foundation. The balance of moisture, polish and season determines how each piece of sushi holds, how it warms in your hand, how it melts as you eat it. Fresh milling protects the natural sweetness of the grain and ensures the structure is just right.

Bluefin Breakdown — 12-Course Omakase
£195 per person · includes a welcome glass of bubbles

ASA invites you to join us for Bluefin Breakdown, a one-night-only omakase collaboration led by Head Chef Shaulan Steenson alongside Head Chef Haydn Payne of Salvador, centred around a whole Bluefin tuna.

On the evening, the fish will arrive intact and be broken down live by our team, with guests invited to watch the process unfold up close. Every part of the tuna will then be transformed into a carefully curated 12-course omakase, allowing you to experience the full character of the fish from start to finish.

The experience begins at 8pm. Across the evening, the menu showcases Bluefin in many forms — from bone-rolled temaki and silky sashimi to aged otoro nigiri, alongside warm dishes including wagyu.

Bluefin Breakdown promises an evening of exceptional produce, thoughtful cooking and genuine hospitality.

A live Bluefin tuna breakdown, a 15-course omakase, vinyl playing and an intimate group of guests gathered around the counter. Every cut of the fish was explored, course by course, offering a rare and immersive dining experience.

With all tickets sold, the evening set the tone for the year ahead. We can’t wait to host more of these events — inviting guests to discover outstanding fish in all its forms, through Shaulan and his team’s modern Japanese cooking. .barnard
