Our History

The “Pizza a portafoglio” is one of the most iconic street food specialties of Neapolitan cuisine. Slightly smaller than a traditional Margherita, it is folded onto itself to make it easier to eat while walking — hence the name “folded pizza”. Also known as “a libretto” or “little sister” of the round pizza, it has become a symbol of Naples’ street food, sold for just 1 or 2 euros in many local pizzerias.

In her book “Il ventre di Napoli”, writer Matilde Serao traced its origins back to 1738 and the historic pizzeria Port’Alba. She describes:

“The pizzaiolo with a shop prepares many of these small round pizzas at night, made with dense dough that burns but doesn’t fully cook, topped with almost raw tomato, garlic, pepper, oregano. These pizzas, sold for a penny, are delivered to a boy who sells them at a corner stall all day.

There are also slices sold for two cents to school children. When stock runs out, the pizzaiolo sends more until night.

Boys carry them on their heads in a convex tin shield, walking through the alleys shouting: pizza with tomato and garlic, mozzarella and salted anchovies!

Poor women sitting on the steps buy and dine — that is, have lunch — with a penny’s worth of pizza.”

The “pizza a libretto” was born as humble street food, distributed by young boys for only a few cents. The Port’Alba pizzeria, the oldest in Naples, was located in the city’s cultural center and was founded by the D’Ambrosio family. At that time, the place consisted of just an oven and a marble counter, where pizzas were kept warm in metal heaters.

And so, the iconic folded pizza was born — compact, flavourful, and ready to go.🍕
