Authentic Larb G*i Cooking | Thai Food Recipe

We are cooking up some delicious Larb today, a classic Thai food dish that's perfect for a light meal. This recipe combines fresh ingredients for a vibrant healthy salad, making it a great option for home cooking. Enjoy!

200g Minced chicken
100g Chicken liver (optional)
2x heaped tbsp Khao Khua ( roasted raw sticky rice)
1x heaped tbsp p**g bon ( roasted chilli flakes)
1x large banana shallot
5x mint leaves
1 bunch of coriander
3 stems of spring onion
4 stems of saw toothed coriander
Couple of dry roasted whole chilli
Pinch of sugar
Fish sauce 2 tbsp at first (we added an extra half and then another)
Lime juice 2 tbsp at first (we added another 2 tbsp)

Fried Chicken Larb Balls That Tastes Better Than Restaurants

So today we have a new recipe, one that we haven't tried before. This is a recipe that utilises all of the flavours from Larb g*i salad and puts them into deep fried chicken balls.
I know right! Totally scrumptious.

Here's the recipe:

300g Minced chicken
1 Banana shallot sliced thin
5 Kaffir lime leaves thinly sliced
2 tbsp lime juice (we added more)
Half tbsp chilli powder ( we added more)
1 tbsp fish sauce (we put one more after tasting)
2 tbsp Khao Khua (Toasted sticky rice powder) watch the video for details
Quarter tbsp of sugar
6-7 Stems of saw toothed coriander
2 tbsp of tempura flour

Decoration:
8 kaffir lime leaves
8 Dry roasted chilli

Master Panang Curry Paste From Scratch in 15 Minutes
This week's video is by popular request, Panang curry paste. This video Chef Tou shows us how to make the paste, next week Chef Tou will show us how to make a special version of Panang curry. This is carrying on our series on how to make curry pastes.

Here's the recipe:

10/12 Cloves of garlic
2x Banana shallots
1 Tbsp Shrimp paste
1 Heaped Tbsp of galangal
1 Tbsp of cumin seed
1 Tbsp coriander seeds (roast first or cook the paste a bit longer when making the curry)
3 x woody stems of lemongrass
Rind from half a makrut lime (kaffir)
40g Dried chilli (soak in water first)

Easy to Make ROYAL Dish from KING RAMA V Era

This week's video is all about the Thai Royal dish Gaeng Run Juan.
Gaeng Runjuan (or Kaeng Ranjuan) is a historic Thai royal curry originating from the King Rama V era, known for its aromatic scent—literally translating to "aromatic curry". This zero-waste dish is traditionally made by simmering beef (or pork/chicken) and combining it with leftover nam phrik kapi (shrimp paste dip), lemongrass, lime leaves, and bird's eye chilies to create a unique, savory, and tangy curry.

Here's the recipe:

Nam p**g gapi:

1 Heaped tbsp of shrimp paste
6 cloves of garlic
7 Thai bird's eye chilli
1 disc of palm sugar (about 5 grams)
Juice from 1.5 limes
Half tbsp of fish sauce

For the curry:

1 Chicken breast
1 litre of water
1.5 banana shallots cut into chunks
2.5 stems of lemongrass finely sliced (just the woody parts)
1.5 tbsp fish sauce
All of the nam p**g gapi from above
Handful of kaffir lime leaves
Handful of sweet basil leaves
Some fresh chilli to decorate

Sadao nampla wan สะเดานำ้ปลาหวาน is a Thai dish consisting of neem (sadao) which is probably the most bitter veg you would ever have in your life, even more bitter than bitter melon. It's served with a sweet and savory dipping sauce (nam pla wan), often alongside other elements like grilled fish or shrimp. This dish is known for balancing the bitter flavor of the neem with the rich complexity of the sauce.

Here's the recipe:

300g Sadao
3x Banana shallots sliced thin
100ml water
3 tbsp tamarind paste
200g palm sugar
20 dried red chilli
3 tbsp fish sauce (we added an extra one after)
200g coriander (optional)
Good quality oil
Salt (couple of tsp when boiling the sadao, and a dash for when frying the shallots)

This Homemade Sriracha Sauce Will Make You Never Buy Store-Bought AGAIN!

Chef Tou gives us her recipe for the famous Sriracha chilli sauce. Enjoy.

100g -150g Large sweet chilli (p**g chee fah)
50g Thai bird's eye chilli (p**g kee nu)
Quarter to half a tbsp of MSG (optional)
1 tbsp of sugar
2-3 tbsp white vinegar
10 cloves of garlic
Quarter tbsp of salt
About 300ml of water

Store in an airtight glass bottle

This Oxtail Noodle Soup Will Melt Your Heart

This is Chef Tou's amazing Oxtail noodle soup recipe. I've been eating this dish for years and it never ever disappoints. It's great for the family as once cooked you can keep it in the fridge for a week and just heat it up when you need it. Hope you enjoy this family favourite.

Here's the recipe:

5 kg oxtail ( feel free to use less)
Enough water to cover the meat ( you may need to top it up)
1 pack of rice vermicelli
2 large sticks of cinnamon
6 star anise
2 whole bulbs of garlic (no need to peel it)
3 large pieces of ginger (no need to peel it)
handful of coriander root
3 to 4 tbsp of our garlic, coriander root and black pepper mixture
3 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp golden mountain seasoning
3 tbsp dark sweet soy sauce
3 tbsp oyster sauce
Skin from a whole pineapple
Chinese celery, coriander & spring onion to decorate

This Southern Thai Dish Will Set Your Soul on Fire
This dish is an absolute classic southern Thai dish. We'll use minced chicken, but you can use any other minced meat. This dish is stir fried with a southern curry paste laced with turmeric. It's spicy and fragrant with a hell of a lot of flavours going on. This dish is sometimes confused as being a curry, it's not a curry but it does utilise making a curry paste to stir fry the ingredients in.

1 shallot
2 stems of lemongrass thinly sliced ( just the woody part)
As much dried chilli as you can handle
3 pieces of turmeric
Skin of half a kaffir lime ( substitute with kaffir lime leaves if you cant get it)

Mastering Thai Sator Beans with Prawns - Authentic Recipe

This is a great dish that you get all over South East Asia, but maybe the best one is in Thailand. Spicy, Umami laden dish that is amazingly easy to prepare and cook.

250g prawns
100g stink beans
2 large shallots sliced thin
10 cloves of garlic
2 tsp of shrimp paste
2 tbsp of fish sauce ( use 1 to start off with)
10-12 Thai birds eye chilli
10-12 dried Thai birds eye chilli
pinch of black pepper
1 tbsp oyster sauce
A few tbsp of oil
dash of water
dash of sugar to taste
Some sliced sweet red chilli to dress

Ultimate Thai Green Chili Chutney You Need to Try | Nam P**g Noom

I think this is the easiest recipe that we've done here at Fitou's Thai Kitchen.
I mean it only has FOUR ingredients, easy peasy right. So this sauce is called Nam p**g Noom, p**g noom refers to the type of chilli, large young green chillies. This sauce originates from the North of Thailand and so is less spicy but high in flavour, it is usually placed on the side of your plate or used as a dipping sauce for raw vegetables.
Fair warning it's incredibly moreish.

10 large young green chilli (p**g noom)
4 shallots
14 Cloves of garlic
2-3 Tbsp fish sauce (replace with salt if Vegan)
Juice from half a lime
Serve with rice and some raw veggies

The REAL Yellow curry, a watery, spicy amazing curry from the south of Thailand, not Gaeng Gari which is often labelled as yellow curry in the West. This curry is jam packed with fresh Turmeric.

Half coconut neck/ heart of palm
Handful banana shallots sliced thin
Handful of turmeric sliced thin ( we used extra)
Large fresh water prawns
15 cloves of garlic
15 birds eye chilli
15 dried birds eye chilli
2 tsp of shrimp paste
Half litre of water for the blender
1.5 litres of water for the curry
4 Tbsp fish sauce although we used an extra one
4 Tbsp of lemon juice although we used an extra couple and a bit of lime juice
