Diary to Dish: Noodle Salads

From The Vietnam Diaries, it was the South’s noodle salads that stuck with us - vibrant, built to mix, full of herbs. So we’ve tuned ours:
• Fresh lettuce for extra crunch
• Vermicelli rice noodles with spring onion oil
• 25% more protein across the range
• Pickled carrot for snap + fresh cucumber
• New herbs: perilla & Thai basil
• Garnishes: crispy shallots, coriander, fresh chilli, peanuts
• A cleaner, balanced nước chấm to tie it together

From The Vietnam Diaries - Hội An, Day 4: we found bánh mì that were crisp, light, and layered with care. We came home and tuned ours:
• Flaky, airy baguette
• Vietnamese butter
• Chicken-liver pâté - add to any bánh mì
• Sharper pickles + cucumber
• More protein in every bánh mì
• House Viet jus to finish
• Crispy shallots, fresh chilli, herbs

Diary to Dish: HOP Rice Boxes 🍚

Inspired by Cơm Bình Dân — everyday rice for everyday people.
What we learnt on the trip became the bowl you’re eating now: spring onion oil through the rice; sharper pickled carrot and Viet salad; new herbs perilla + Thai basil; crispy shallots, coriander and fresh chilli; and a cleaner, balanced nước chấm to bring it together.

Now with +25% more protein and +33% more rice.
