The ingredients are placed in an earthenware pot, also called a tanjia, and cooked over hot ashes for several hours. This method gives the dish its rich, tender texture and deep flavor, making it a staple of Moroccan cuisine. Traditionally, it was prepared by men for special gatherings or celebrations.

“We wanted to create a secluded spot where people could experience Moroccan hospitality and
cuisine in a truly unique setting,” said Chef Hamza Harrak, the founder of Tanjia Garden. “The tent-
covered garden behind Dar Marrakesh is the perfect hidden retreat to get lost in.
