Halibut, Langoustine, Courgette, Baby Artichoke, Lemon Verbena

North Sea halibut, cooked classically in foaming butter, served with Scottish langoustine tail. The claws are folded through a mousse made from halibut trim, and wrapped in courgette flower.

Courgette in varying forms, baby artichoke and verbena gel complete the plate. Finished with a langoustine jus infused with lemon verbena, and a light artichoke foam.

Crab, green asparagus, pistachio, sweet cicely, Sarawak pepper hollandaise.

Cornish c**k crab, gently steamed and hand-picked, folded with crunchy Carosello cucumbers and pistachio mayonnaise. Blanched slices of British green asparagus frame the dish.

Inspired by Malaysian black pepper crab, we make a paste of Sarawak pepper, curry leaves, garlic and dark soy, folded into a light, aerated hollandaise and spooned over the crab. Finished with foraged sweet cicely.

St. Bride’s Chicken, White Asparagus, Morel,
Lemongrass, Satay Sauce​​

This season, we celebrate one of Scotland’s finest poultry producers: in Strathaven, where AJ and Robert Morris rear exceptional free-range chickens. Raised for around 140 days, these exceptional free-range birds develop remarkable depth of flavour. We begin by brining and marinating the chicken overnight with koji, spring onion, and ginger before slowly baking and finishing it on the grill.

Alongside, morels are stuffed with satay-spiced chicken leg and cooked in foaming butter, while seasonal white asparagus is paired with a sauce of fermented asparagus juice, cultured cream, and lemongrass.

August reservations are now open.
