Chargrilled Leeks.

Cooked over the Josper until lightly charred, then dressed with a mixed vegetable escabeche of Arbequina olive oil and Moscatel vinegar, with pine nuts, sultanas, fennel, and carrot.

Sweet, smoky and gently acidic - a perfect accompaniment to our favourites from the asadores.

Inspired by the pintxos bars of Bilbao, where counters are lined with small plates and each stop offers something new. The Taberna gathers all of our favourites into one concise menu, each given the true Nieves treatment.

Orzo & Lamb Sweetbreads.

Simmered in chicken stock, the orzo is finished with an aromatic lovage pesto, layered with golden sweetbreads seasoned with Moscatel vinegar and Arbequina olive oil, and topped with sun-blushed tomatoes.

Simple, balanced, perfectly unctuous.

3 Sips at Legado.

A small introduction to the meal - three sips designed to enliven the palate and set the tone for what follows, guided by the seasons and the landscapes of Spain.

Served in six unique cups, each one representing a different region, every piece is handmade, with details shaped by the character of the place it reflects. These range from iron-rich tones of the Basque Country to organic forms reflective of Spain’s varied and rugged terrain.

Created in close collaboration with , each cup was crafted by hand, bringing Nieves’ ideas, memories, and travels to life.

A few weeks ago we hosted a belated New Year’s celebration in The Taberna.

After a whirlwind opening in September, it was a pleasure to have our friends and family with us once again, with Nieves sending plates of buttery sardines and decadent ‘vikini’ sandwiches whizzing around the room. Just like our favourite evenings in Bilbao.

We are overjoyed, overwhelmed, and incredibly proud to share that Legado has been awarded a Michelin Star just six months after opening!

Receiving this recognition so soon is something we have dreamed of. It reflects the dedication, care, and quiet determination that shaped Legado from the very beginning - led by our Chef Patron, Nieves Barragán Mohacho.

At the heart of Legado is a commitment to highlighting lesser-known dishes and traditions from across Spain. A style of cooking rooted in craft: exceptional ingredients, whole-animal butchery, and a deep respect for the stories, regions and histories behind each plate. This star recognises not just what we cook, but why we cook it.

Above all, this moment belongs to the team. From the kitchen to the floor, and everyone who helped build Legado behind the scenes, your hard work, skill and belief have brought the restaurant to life.

To our guests, thank you for joining us, supporting us, and sharing in the food and history we set out to honour.

Our Romesco Martini.

Inspired the classic Catalonian sauce, a toasted almond–infused gin is paired with roasted red pepper vermouth, Manzanilla sherry to bring a bright complexity, and a measured splash of olive brine.

Served ice-cold with a gordal olive. A classic seen through a Spanish lens.

The Vikini.

Sweet Ibérico ham with truffled Extremadura goat’s cheese and tarragon mustard, layered between white bread toasted on the plancha in clarified butter, then finished with béchamel and freshly grated truffle.
