A recent private chef experience.

This time, we were kindly supported with sake from Dojima Sake Brewery,
and I created a menu highlighting sake lees throughout the course.

The gentle aroma and depth of fermentation
brought a quiet richness to each dish.

I’m truly grateful that everyone enjoyed it.

Last weekend I was cooking lunch at Dojima sake brewery for guests visiting the brewery tour.

How to cook perfect Japanese rice & miso soup 🍚🍲

Rice
• Rinse the rice
• Drain well
• Add the same amount of water as the rice
• Cook on high heat until boiling
• Reduce to low and cook for 5 minutes
• Turn off the heat and let it steam for 20 minutes

Miso Soup
• Bring water to a boil
• Turn off the heat, add katsuobushi
• Once it sinks, strain to make dashi
• Return to heat and cook the ingredients
• Dissolve the miso separately, then add back to the pot

☝️
Never dissolve miso directly in the pot,
and avoid boiling after adding miso.

For an easy option with authentic flavour,
I highly recommend instant miso soup, which just launched today!!

How to make Sake Lees Marinade : Kasudoko
A simple, beautiful way to bring depth and umami to everyday cooking.
Today I’m using premium sake lees from and marinating salmon before grilling it gently in the oven.
It’s one of those dishes that feels nostalgic, comforting, and quietly luxurious.
Full recipe below ↓

Sake Lees Marinade (Kasudoko)
• Sake lees 100g
• Miso 10g
• Sugar 1 tea spoon
• salt one pinch
Mix together → coat salmon → rest → wipe off → grill.

Perfect with warm rice and miso soup.

How to make super easy yet authentic homemade soy-mai!
You will eat them non-stop!

① Finely chop an onion and toss it with potato starch.
② Mix minced pork with oyster sauce, soy sauce, ginger, sugar, salt & pepper, and sesame oil.
③ Add the onion to the pork mixture, mix well, and let it rest for at least 1 hour.
④ Wrap the filling in Siu-mai wrappers.
⑤ Heat your steamer until the steam rises.
⑥ Line the steamer with lettuce, place the Siu-mai inside, and steam for 12–13 minutes.

That’s it! Delicious on their own, but my favourite is mustard with soy sauce.
Yuzu kosho is also amazing. 😉
