📣 Meet the Maker: Kalios

Eight generations, a village in the Kalamata region of southern Greece and a decision, in 2010, to take the family olive groves and share them with the world.

That is how Kalios began, two founders on motorbikes driving through Paris, stopping at restaurants, asking the greatest chefs to taste their oil.

Today, Kalios is the olive oil of choice for over 1,000 chefs, including Pierre Gagnaire and Nicolas Sale. Hand-harvested from November to January in the village of Neochori-Ithomi, every drop is made from the ancient Koroneiki olive, picked at precisely the right moment to capture the flavour that eight generations have perfected.

Based in Castilla on the La Retamilla estate, home to Europe’s largest organic outdoor chilli garden, every chilli is grown, fermented and crafted on-site. Their seed-to-bottle approach is rooted in time-honoured methods: slow fermentation for up to two years, followed by careful smoking over holm oak for a deep, complex finish.
