It is with great sadness that we inform our friends and customers that Josephine Poniente of Josephine's Filipino Restaurant died of covid on the 4th January 2021.
She was Josephine's Restaurant's First and longest serving Chef working in the kitchen for 24 years, from 1996 until 2020. Sometimes the restaurant would be a completely full house, extremely busy and Josephine would be the only person in the kitchen cooking for everyone with many, multiple dishes on an extensive menu. That was how hardworking, determined and talented she was even into old age.
She helped pioneer Filipino food in the UK for 2 and a half decades. The Lechon Kawali and Krispy Pata she served up were legendary.
She was a tireless worker even at 69 years old in 2020. Still preparing and cooking food sometimes in intense conditions in the kitchen.
Her cooking skills, hard work ethic, warm heart and faith in God won her many loyal friends and customers in the 24 years she worked in the restaurant.
She is sorely missed by her family, friends and loyal customers.

Our Family has set up a GoFundMe for her Funeral. She was a very generous and giving woman, eager to serve food, talk to customers and make everyone feel at home. For the many years of hardwork and devotion to her family, friends and cooking for customers, we want to do right by her and give her a good Funeral.
