🔍 Strangest drink request?
A mojito… no mint, less ice. Bold choice - mint’s what makes it a mojito!
🔍 Where are you on a day off?
Exploring a new cocktail bar in central London. I try a couple each month - always on the hunt for fresh ideas. And yes, I binge mixology videos like most people binge Netflix.
🔍 Favourite spirit?
Japanese single malt whisky. The craftsmanship and smoothness - nothing beats it.
🔍 Beer or wine?
Not much of a wine guy. In summer? Beer, definitely.
🔍 Go-to beer?
Camden Lager - crisp, local, reliable. Abroad? Tiger and Singha - both super drinkable.
🔍 Top bartender trick?
Balance. Taste everything. If it’s not singing, start over.
🔍 Cocktail inspiration?
The Prohibition era - creativity under pressure. Also Japanese mixology: it’s precise, elegant, and full of story. Legends like Hidetsugu Ueno and Shingo Gokan treat each cocktail like a performance.
🔍 Advice for aspiring bartenders?
Know your spirits - and their stories. A great drink is one thing; a great experience is what people remember.
