We’ve been working on this one for a while. 🧈🧂

We’ve always made our cakes in-house, but this felt like the right time to take it a step further. People come to us for coffee and cakes, and we’ve always wanted to offer something you might not easily find elsewhere.

It started as a simple idea around our first birthday last year, but took us longer than expected to get it to where we’re happy with. Between everything happening day to day and not wanting to compromise on what we already do, it’s been a slow process.

But here we are. From now on, everything you see on the counter is all made in-house and on-site, by a very tiny kitchen team (aka me).

It also means we can keep things a bit more interesting, and hopefully a bit more “us” instead of just the usual.

As the only baker behind these rolls, I’m currently making every single batch myself. It’s why our daily quantities are limited and why they’ve been selling out so fast these past two weeks.🥹

We are so grateful to our regulars for their constant support and to every newcomer for giving us a try. We will continue bringing the best coffee and cakes we can to you, and now... our new Sea Salt Butter Roll (Shio Pan). 🤎

A few snaps from the first week of our Sea Salt Butter Roll (Shio Pan), it’s been a busy one!🧈🧂

We use a slow-fermented dough for a soft, airy crumb and a deeper wheat sweetness. As it bakes, the butter melts through the dough, creating that golden base.

It’s exactly how we like it: soft inside with a light crunch underneath. Butter-infused, not butter-filled. Balanced and not oily.

Fresh out of the oven daily. 🤎

Our Basque cheesecakes have been on the counter for over a month now, and we’ve loved seeing so many of you pick them up.

Deeply caramelised on the outside, with a soft, creamy centre that’s just set enough to hold a clean slice.

Roll cake update 🍰

Our roll cakes take quite a bit of love (and time) to make, and they’re prepared in our very tiny kitchen, often by just one person.

We know many of you come specially just for our roll cakes, and they sometimes sell out earlier than we’d like. Thank you for always being so understanding.

To keep things manageable and make sure we can continue bringing new cakes, bakes and ideas to the counter, we’ll now be baking our roll cakes in small batches for the weekend only.

You’ll find them every Friday and Saturday at the shop. Whole roll cakes are also available for pre-order online.

This gives us a little more room in our kitchen to work on new cakes and bakes, which we’re very excited to share with you soon.

Our weekday counter will still be full of freshly baked treats, Basque cheesecakes and seasonal tarts.
