An ingredient known by every Chinese household when bringing a new member of the family into the world. sweet vinegar 白人甜醋 For braising pigs trotters with ginger and eggs, the perfect potion for protecting new mothers and households from sickness and evil spirits. Our love for it has manifested itself currently in our coconut ice cream/olive oil/caviar and Pat chin vinegar dessert. The staff get a hard time from me every briefing. As a Chinese restaurant, with the accolades we have, we no longer represent just A Wong or Victoria; we represent a community. If we give guests a crap time, that is reflected in how they talk about Chinese restaurants, whether we like it or not. I’m not saying it’s fair, but it’s a responsibility. has a once in a lifetime tour that is truly memorable. A morning with him in the wet markets of #鴨脷洲 and seeing the typhoon shelters. Salted, fermented black beans — 豆豉 (dòu chǐ).

Trying to describe their flavour in one word is almost impossible. They carry hints of dark chocolate, a touch of coffee-like bitterness, deep saltiness, and, most importantly, a rich, rounded umami depth.

In dishes like beef in black bean sauce #豆豉牛肉 or mapo tofu #麻婆豆腐, they create a flavour that’s bold, complex, and unmistakably Chinese.

For me, the potential of fermented black beans goes far beyond the savoury world—but that’s where their heart lies: at the centre of some of China’s most iconic dishes.

I still get a massive sense of pride when we see articles about .wong_londonuk, especially when in the prehistoric medium of print. The excitement of going to the local newsagent to pick up a broadsheet.

What makes myself, , and team a.wong even more proud is that even after 15 years of , people still find what we do newsworthy. Today’s article is especially touching, as it talks about the way restaurants are more than just places to eat; they are markers, snapshots of moments in our lives, memories that can transpire across generations.

Secondly, in the current world that we all live in, “I’ve become aware of quite how precarious restaurants like this are, how many things have to go right for them to work, how obsessive their owners are, how many tiny, imperceptible choices they have to get right for you or me to walk in and think, ‘ah, it just feels good here.’”

#湯圓 making with my annoying but wonderful big sister . An amazing sticky dumpling filled with molten oozy black sesame filling. An amazing tradition and pastime of the ❄️ festival.
