27°C by noon — so naturally, breakfast was my signature Loaded Akara Pro Max.

Similarish to but lighter than falafel, protein-rich and gluten-free, akara is the perfect foil for almost any flavour. Think of it as a kind of bread that actually brings something to the party.

Today’s build: smoked mackerel, herby grains, olives, cherry tomatoes and cucumber spears — with hummus as the quiet UN Peacekeeper binding everything together.

Lettuce cups so every mouthful is different as you build-ya-own.

Pan-seared lamb chops. The secret to the crust is high heat and speedy cooking.

Render the fat first by standing the chops upright in the pan like soldiers standing to attention. Then cook the chops in the rendered fat.

Whilst the chops were resting, I made the sauce in the same pan: garlic, capers, anchovies and gherkins. All finely chopped. A splash of Naija stew and a smidgen of butter and Bob’s your uncle.

Trying to use up things from my fridge and cupboards, I somehow wandered to Bangkok via Lagos whilst also meandering through Calabar 🇹🇭🇳🇬

Breakfast was coconut and peanut noodle soup with prawns, chicken, tofu puffs and greens … with enough chilli to wake up your ancestors. Finished with grilled chicken suya because apparently restraint has now fully left the building.

Flavours included scent leaf, garlic, ginger, crayfish, lemongrass and a dash of soy sauce, topped off with coriander and spring onions because garnishing is very cheffy, of course.

Honestly, this was supposed to be a fridge clear-out exercise, not the opening scene of a fusion noodle bar in East London.

Yet here we are 😂

Meanwhile, somewhere in Surrey, people are preparing to have an extremely good lunch.

This morning’s Pitanga delivery travelled all the way from London loaded with grilled fish, mixed suya, coconut rice, fish stew, honey beans and plenty of fried plantain — the kind of order that starts quietly and ends with everyone unbuttoning something.

I love orders like this because they feel less like takeaway and more like hosting without the washing up.

This was a slightly unusual request from a regular that normally orders Onugbu (Bitterleaf Soup) every day that he’s in the U.K.

Nigerian-based, he’s often in the U.K. and had called a few days ago to see if I had started delivery services ….

I decided to take a photo (thankfully). Just in case he liked it and wanted to re-order.

Jollof Rice and Beans .. with assorted meat. Given his love for Onugbu, I correctly guessed he would enjoy crayfish in the rice and beans lol.

Yesterday a lady walked into my kitchen and asked:

“Can I buy three tomatoes?”

I told her this was a restaurant, not Tesco.

Turns out she had just flown 13 hours from the Philippines and wanted to cook a prawn dish.

So of course I gave them to her.

In Madam Pitanga’s kitchen, sometimes we sell food…
