A night of spicy plates and seriously good bottles, with and Frederic Grappé of steering the pours course by course and proving, once again, that wine can absolutely hang with chilli. Raw beef laab came out swinging with that campari edge, sai au hit the table hot and smoky, and the room stayed loud in the best way from first sip to last plate.
