Effemeridi - ephemeris charts. The maps on which, since antiquity, man has tried to fix the motion of celestial bodies, orienting himself by the stars to go further than he’d been before.

Le Stadere, a small family producer in Scansano in the heart of Maremma, named their Riserva after them. The wine is the same idea: 100% Sangiovese, aged long in French oak, going beyond the freshness and drinkability typical of Morellino into something with more structure, more depth, more to say.

Sangiovese from Scansano. Wild boar from the hills above. If the Maremma has a defining combination, this might be it 🐗

British asparagus season doesn’t last long - we’ve made the most of it.

The Tyrrhenian Sea has fed the Maremman coast for centuries. Bluefin tuna fished since Roman times, crab, octopus, the small catch that becomes a fritto misto over a long lunch somewhere cool and shaded after a morning on the beach.

Owners Dickie and Alice spend their summers fifteen minutes from that sea, eating the way the coast dictates - and they’ve brought a few of their favourites to our menu here in Brixton.

Moscardini with Taggiasche olives, chilli and parsley. Crab tagliatelle with cherry tomatoes. Rosemary-crusted tuna tagliata with rocket and pecorino. Fritto misto - a permanent fixture at lunch.

The Maremma was wild land for a long time. Marshes, shrubland, coastline. For centuries, people lived off what it offered - game, seafood, foraged greens.

Rabbit was part of that picture long before it appeared on restaurant menus. Hunted, slow-cooked, eaten at farmhouse tables. Cucina povera in the best sense - not poverty, but resourcefulness with exceptional ingredients.

Coniglio fritto - deep-fried rabbit leg served with aioli and lemon. Our take on a Maremman staple.

Sometimes the best thing you can do is get out of the way of great ingredients.
