Akihiro Sato is fascinated by the world around him.

Exploring the concept of fūdo – the Japanese idea of climate, soil, culture and sense of place – wherever he lays his knife roll, Akihiro trained at two-Michelin-star Narisawa in Tokyo, where he was exposed to cooking shaped by Japanese nature, seasonality and satoyama culture, and Yamazaki, the revered counter-style kaiseki restaurant, where precision and restraint have become an artform.

For his two weeks at Carousel, it’s the fūdo of the UK that will be getting the Akihiro treatment. Standout dishes like ‘Miso-Marinated Cornish Turbot Tempura, Smoked Lettuce’; ‘Aged British Beef Nikujaga, Potato & Celeriac Purée, Braised Leek & Carrot’ and ‘Scottish Girolle Rice, Soy-Marinated Egg Yolk’ apply razor-sharp Japanese technique to exceptional local produce from our favourite suppliers, with quietly breathtaking results.

It’s a compelling menu that draws from home cooking, regional food, shojin ryori, kaiseki and the world of tea, reworking those ideas through the foggy lens of UK seasonality.

Delivering the punch and soul of traditional Khmer flavours through a distinctly British, ingredient-focussed lens, his food combines depth of flavour, blow-your-socks-off levels of spice and aromatics so fragrant they’ll have you wishing you could bottle them up for later.

We’re talking ‘Num Pang of Khmer Style Char Sui, Chicken Liver Parfait, Pickled Mussels & Fermented Fennel’ and ‘Saraman Spiced Hogget Rack, Gooseberry Tuk Trey Koh Kong & Watermelon Salad, Shrimp Floss’.

Tom followed his week at Carousel with a stratospherically successful seven-month residency in Borough Market, where the deservedly hyperbolic reviews poured in. With a first permanent spot opening in Soho this autumn, we jumped at the chance to have him back for round two.

Open to just twenty guests at a time, the weekend features world-class guest chefs cooking lakeside on the WildKitchen, lavish interiors, leisurely outdoor pursuits and fireside nightcaps in the breathtaking surroundings of the legendary director’s private Wiltshire estate.

Your weekend at Ashcombe Estate features a two-night stay in one of the six en-suite doubles or four luxury suites, all with impeccable interiors by designer Edward Hurst.

Take your time to unwind and enjoy the full splendour of the tranquil Wiltshire surroundings, including access to the lakeside spa featuring a wood-fired sauna and hot tub, yoga classes, wild swimming and wellness treatments.

Complementing Saturday’s WildKitchen experience is a curated seasonal food and drink offering from Carousel, taking you through from the wood-fired Friday evening menu in the Old Brewery to a leisurely Sunday morning breakfast.

At Manifesto 13, the flavours of Peru and Italy collide with gloriously inauthentic abandon.

If you like the sound of ‘Oyster, Gazpacho Yuzu, Chorizo, Charapita’; ‘Duck Magret, Orzo, Northern-Style Seco, Sarza Criolla, Loche Pumpkin’; or ‘Rice Noodles, Baby Coastal Squid, Ají Amarillo Dahi, Seaweed, Amazake’, you might just have found your happy place.

Behind this ‘mestizo’ mash-up is Arequipa-born Danitza Alpaca, whose experience includes 50Best favourite Astrid y Gastón (Lima), two-star D.O.M (São Paulo), three-star Atrio (Cáceres) and two-star Mugaritz (Basque Country).

Danitza joins us from Madrid for a celebratory week showcasing one of the city’s most exciting culinary voices. This is what Carousel is all about it, and we cannot get enough of it.

This heatwave has got us pining for the rolling hills of Wiltshire and Guy Ritchie’s private lakeside idyll.

As well as a weekly-changing line-up of ludicrously talented guest chefs (coming up we have Alex Claridge from Michelin-starred The Wilderness, Birmingham, and Edinburgh superstar, Roberta Hall McCarron), our summer residency at Ashcombe Estate also features long, lazy afternoons of leisurely outdoor pursuits that are made for glorious summer days like these.

Cool down with a spot of wild swimming in New Lake, also home to the Ritchie family sauna, or stretch out under a chestnut tree with a good book and glass of Eau de Provence rosé, before dining al fresco at Saturday evening’s WildKitchen experience.

This weekend we have special double-header as Chantelle Nicholson and Sabrina Gidda join us for a four-hands dinner by the lake. Only a few spaces remain for the rest of the season so hit link in our bio if you’d like to find out more.

He had us at ‘Langoustine Toast, Green Allium Emulsion’…

With a maximalist style that refuses to be labelled, Spectre is the full-throated, at times off-the-wall, fine dining experience from Sebastiano Campanelli, a virtuoso chef who cut his teeth at Maaemo*** and Noma*** before rising through the ranks at The Man Behind The Curtain* (Leeds), Mana* (Manchester) and Savage* (Oslo).

Now riding solo, restrained only by the limits of his imagination, Sebastiano is ripping up the rule book with flavour-forward creations like ‘Cod, Aji Amarillo, Fennel Lyonnaise, Coriander’; ‘Tuna Crudo, Watermelon, Nasturtium, Yellow Chilli’; and ‘Koji Cured Duck, Black Garlic, Sour Cherries, Sichuan Pepper Corn’. Because, why not?
