For this reason, when envisioning the evolution of our kitchen, there was only one path: to honour the volcanic origins to which we owe everything.
So far, the journey of Unlock has explored an Italian fusion path — a direction we deeply love.

Volcanic Kitchen & Wines is a concept by Unlock — a monthly residency hosted in our restaurant, exploring volcanic territories across the world.
From Mount Vesuvius to Mount Etna, from Santorini to Mexico, from Indonesia to Japan — we travel across fire-shaped landscapes to uncover their culinary identity.
At the core of this journey are four elemental identities that define our cuisine:
Dough, the human gesture — where nature becomes culture.
Fire, the origin of transformation.
Lava, the raw force shaping the land.
Earth, the source of life and flavour.
Each destination reveals something new:
ingredients grown in mineral-rich soils, ancestral techniques shaped by heat and ash, and wines that carry the unmistakable imprint of lava.
Our journey begins on April 17, in Sicily — exploring the secrets and the incanto of Stromboli, Etna, and Pantelleria.
