“Volcanic Kitchen & Wines” is a monthly residency born from an idea by .giovanni2 and brought to life by chefs and .
It’s a tribute to volcanic territories — a continuous journey of research and inspiration that will guide us throughout 2026, hopefully unlocking its next step in 2027.

Tomorrow marks our first launch.
Wish us good luck, and come experience the incredible creations of our magic trio.

Expect Mediterranean smoky flavours, top-notch ingredients from Sicilia and Campania, and outstanding volcanic wines from around the world.

For this reason, when envisioning the evolution of our kitchen, there was only one path: to honour the volcanic origins to which we owe everything.
So far, the journey of Unlock has explored an Italian fusion path — a direction we deeply love.
Now, it is time to go further. To explore more.

Volcanic Kitchen & Wines is a concept by Unlock — a monthly residency hosted in our restaurant, exploring volcanic territories across the world.

From Mount Vesuvius to Mount Etna, from Santorini to Mexico, from Indonesia to Japan — we travel across fire-shaped landscapes to uncover their culinary identity.

At the core of this journey are four elemental identities that define our cuisine:

Dough, the human gesture — where nature becomes culture.
Fire, the origin of transformation.
Lava, the raw force shaping the land.
Earth, the source of life and flavour.

Each destination reveals something new:
ingredients grown in mineral-rich soils, ancestral techniques shaped by heat and ash, and wines that carry the unmistakable imprint of lava.

Our journey begins on April 17, in Sicily — exploring the secrets and the incanto of Stromboli, Etna, and Pantelleria.
Get ready for an extraordinary journey across the world’s volcanic regions — where food, wine, and nature are deeply intertwined.

Guiding this exploration are our captains,
Emanuele Esposito and Bruno Rogers,
leading a culinary voyage that celebrates the raw, elemental power of the earth.

This is not just a kitchen.

Two years ago, on March 7th, we opened the doors of Unlock for the very first time to our friends and family.

From the beginning, we imagined this place to be a space where people could gather, share food, share art, and feel part of something together.

In some ways it feels like yesterday.
In other ways, it feels like a whole lifetime has passed.

What amazes us is the number of clients who became friends, the incredible conversations around art and now books (with ) we managed to host, the dinners, the moments shared — and most importantly the small but REAL community that has grown around this space.

We opened with an exhibition called “Riders & Dreamers” by . At the time it felt right.
Today it feels even more true.
Being entrepreneurs often means exactly that: riding forward while holding on to a dream.

So today we simply want to say thank you.

Thank you to everyone who walked through the door, supported us, shared a meal, a conversation, a piece of art.

Looking back at everything we’ve done, one thing we truly loved was organizing networking events for London’s architecture and design community.

But not the usual “stand around with a prosecco” kind of networking.
We hosted something way more fun: a pizza-making experience.
People from across the industry gathered at Unlock, explored the current exhibition with a guided tour from the artist, connected over drinks at the bar, and then rolled up their sleeves for an amazing class with Emanuele, our pizza chef. Everyone learned how to make and stretch dough from scratch, baked their own pizzas — and of course stayed to eat together.
And honestly? The energy in the room was unreal.
So we’re bringing it back.
This year, we want to run these events every month, built with and for the community.

If you have ideas, good energy, or you’re part of the architecture & design world and looking for a fun side project to get involved in — we’d love to connect.

We’re looking for collaborators to help us shape this.
